How To make Oriental Stuffed Mushrooms
2 tb Fresh lemon juice
24 lg Mushroom stemmed *
3 sl Lean bacon
1/4 c Minced onion
4 ts Minced garlic
2 tb Soy sauce
1 tb Sesame seeds, toasted
-lightly 1/2 c Fine fresh bread crumbs
1 tb Bread crumbs for garnish
Pepper to taste 1 Scallion, sliced thin, for
-garnish * Chop stems and leave caps whole In a large saucepan, combine 6 cups water with the lemon juice, add the mushroom caps, and bring the liquid to a boil. Simmer the mushroom caps for 6 mintues, transfer tham to paper towels, and let them drain. (Blanching the mushroom caps will prevent them from wrinkling while they are baking.) In a skillet, cook the bacon over moderate heat until it is crisp, transfer it to paper towels, and let it drain. Pour off all but 1-1/2 tbsp of the fat from the skillet, in the remaining fat cook the onion, the garlic, and the mushroom stems over moderately low heat,stirring, until the vegetables are softened, and add the soy sauce, the sesame seeds, 1/2 cup of the bread crumbs, the bacon, crumbled, and pepper to taste. Cook the mixture, stirring, for 1 minutes, or until it is slightly dry, divide it among the mushroom caps, mounding it, and transfer the stuffed mushrooms to a jelly-roll pan. The mushrooms may be prepared up to this point 1 day in advance and kept covered tightly with plastic wrap and chilled. Sprinkle the remaining 1 tbsp bread crumbs over the mushrooms and bake the mushrooms in the middle of a preheated 325 F oven for 7 minutes, or until the filling is heated through. To make the filling crisper, the cooked mushrooms may be put under a preheated broiler about 4 inches from the heat for 1 minute. Garnish the mushrooms with the scallion. Makes 24 stuffed mushrooms. This Chinese Stuffed Mushrooms is really a simple dish and yet it looks so presentable. Especially when you are planning to host a gathering or Potluck. Impress your friends and family members with this mushrooms!
Main Ingredients:-
3 pcs Baby Pok Choy - Cut half
6 pcs Dried Shiitaki Mushrooms - Soak in water for 30 minutes
120g Minced Pork
50g Fish paste (salted)
5cm Length Diced Carrot
1 tbsp Chopped Spring Onions
1 tbsp Corn Flour
6 Wolf berries (optional)
Seasoning
White Pepper
1 tbsp Soy Sauce
4-5 drops Fish Sauce
Few drops of Sesame Seed Oil
Sauce
100ml Mushroom water
1 tbsp Oyster sauce
1/2 tsp Sugar
1 tsp Maggie Concentrated Chicken Stock
Few drops Sesame Seed oil
1/2 tbsp Olive Oil
1 Clove Chopped Garlic
Few pieces of Sliced Carrot
2 tbsp Cornstarch slurry
Method:
1) Boil a pot of water, add in olive oil & salt. Blanch baby Pok Choy for 1 minute. Drain and arrange on plate.
2) Mushrooms remove stems. Mushrooms squeeze out extra moisture. Keep the mushrooms water.
3) Combine minced pork with fish paste, white pepper, soy sauce, fish sauce, sesame seed oil, carrot and spring onions
4) Split Pork mixture into 6 portions
5) Dust some corn flour on each mushrooms.
6) Roll pork mixture into balls and stuff in each mushrooms
7) Add wolf berries on top (optional)
8) Steam over medium high heat for 12minutes.
9) Prepare sauce: Combine mushroom water, oyster sauce, sugar, chicken stock & Sesame seed oil
10) In a wok, preheat olive oil, add in garlic and carrot. Stir fry for 1 minute
11) Add in sauce. Once boil, add in cornstarch slurry. Cook untill sauce thickened.
12) Pour sauce onto mushrooms.
13) Done!

1 pound shrimp, peeled, deveined, and minced
Pinch of salt
Pinch of white pepper
1 large egg
3 tablespoons (¼ piece) carrot, minced
3 tablespoons cilantro stems, minced
3 tablespoons bamboo shoots, minced
½ teaspoon ginger, minced
1 tablespoon cornstarch
2 tablespoons avocado oil
For the sauce:
