How To make Orzo with Feta, Green Beans, and Tomatoes
10 ounces haricots verts
or green beans
1 cup orzo :
rice-shaped pasta
1 medium onion
2 garlic cloves
3 medium vine-ripened tomatoes
2 tablespoons olive oil
1 tablespoon white-wine vinegar
1 tablespoon chopped fresh flat-leafed parsley leaves
1 cup crumbled feta
Fill a 4-quart kettle three fourths full with salted water and bring to a boil for beans and orzo.
Chop onion and mince garlic. Quarter and seed tomatoes. Cut quarters lengthwi se into 1/4-inch-thick slices. Trim beans and cut into 1-inch pieces. In a la rge skillet cook onion and garlic in oil over moderate heat until onion is soft ened. Add tomatoes and cook, stirring, until tomatoes are softened, about 2 mi nutes. Remove skillet from heat.
Have ready a bowl of ice and cold water. In boiling salted water blanch beans 1 minute. With a slotted spoon transfer beans to ice water to stop cooking. D rain beans well in a colander and pat dry. Add beans to tomato mixture and ret urn water in kettle to a boil. Boil orzo until al dente and drain in colander. Add orzo to bean mixture with vinegar, parsley, feta, and salt and pepper to taste, tossing to combine well.

A Delicious Summertime Salad: Mediterranean Green Bean Salad
This is a summertime salad that you will want to eat. The green beans are crisp and refreshing and paired with creamy feta, figs, walnuts. This salad is loaded with Mediterranean flavors and ready in 10 minutes. Summertime on a plate!

INGREDIENTS
1-pound green beans ends trimmed
A handful of cherry or grape tomatoes halved
A quarter of a small red onion, finely chopped
10 Kalamata olives halved
Feta cheese, to taste and crumbled
5 dried figs, thinly sliced
A quarter cup of toasted walnuts, chopped
Half of a bell pepper, thinly sliced
2 tablespoons finely chopped fresh mint
For the dressing:
3 tablespoons Balsamic vinegar
¼ cup olive oil
1 tablespoon honey
2 garlic cloves, grated
Salt and pepper to taste
INSTRUCTIONS
Bring a pot of water to a boil.
Add the green beans with a teaspoon of salt.
Boil for 7-8 minutes or until tender but still crisp.
Drain and place the beans in a bowl of ice water to shock them This will stop them from cooking further and will help them retain their bright green color.
Drain and pat dry with paper towels.
Make the salad dressing:
Combine all of the ingredients into a bowl and whisk together. Set aside.
Assemble the salad:
Combine all of the salad ingredients into a large bowl. Add the dressing and toss together.
Transfer to a serving platter or bowl and serve. Enjoy

This salad keeps fresh stored in the refrigerator for up to 2 days.

How to Make Greek Green Bean Casserole with Melted Feta
Green beans casserole, aka Fasolakia Yiahni, is one of the great vegetarian dishes of Greece and in the category of Ladera, or olive oil-based vegetable stews. This recipe differes a little. I bake the green beans with feta and the end result is absolutely delicious.
Baked feta and green beans are the two delicious Mediterranean diet ingredients in this simple but luscious Greek recipe! To make this recipe, you'll need fresh or frozen green beans, tomatoes, onions, garlic, extra virgin Greek olive oil and, of course, Greek feta!
Greek feta is the key. I bake it into the casserole and then stir it all around until its all oozy and meltingly delicious.

2-3 Servings
Ingredients:
500g green Beans trimmed
400g Potatoes diced
1 can chopped Tomatoes (400g)
1-2 Onions chopped
2 Bay Leaves
3 Cloves Garlic grated
Parsley chopped
1 tsp Salt
Black Pepper
50g Olive Oil

I used different pasta and made it without the feta but it is optional for you guys. Enjoy!
2 tbsp olive oil
160g celery (2-3 stalks), finely chopped
1 bay leaf
1 cinnamon stick
2 tsp dried oregano
1 ½ tsp ground cumin
1x 400g tin white beans, drained and rinsed
1x 400g tin chopped tomatoes
2 tbsp balsamic vinegar
1 tbsp honey
80g orzo pasta (can also use fusilli or penne)
20g feta, crumbled (optional)
20g fresh flat-leaf parsley, leaves picked
1. Heat 2 tablespoons of olive oil in a large lidded casserole dish or pan over a medium heat. Add the celery, bay leaf, cinnamon stick, oregano and cumin with a big pinch of salt and pepper and a big pinch of chilli flakes if desired. Stir to combine, then cook for 5 minutes.
2. Add the beans, chopped tomatoes, balsamic vinegar, honey and orzo with 300ml boiling water. Bring to a gentle simmer, then reduce the heat and cover with the lid. Cook for 10-15 minutes or until the orzo is cooked through.
3. Remove the cinnamon stick and scatter with the feta and parsley to serve.
