Servings - 2 - 3
INGREDIENTS
Chicken breast - 800 grams
Olive oil - 15 milliliters
Garlic - 1 teaspoon
Salt - 1 teaspoon
Black pepper - 1/2 teaspoon
Paprika - 1 teaspoon
Chicken - 500 grams
Water - 500 milliliters
Onions - 40 grams
Ginger - 5 grams
Garlic - 5 grams
Cloves - 8 pods
Star anise - 2
Black cardamom - 2 pods
Cinnamon stick - 1
Bay leaf - 1
Butter - 70 grams, divided
Garlic - 1 teaspoon
All purpose flour - 40 grams
Whisky - 60 milliliters
Prepared chicken broth - 300 milliliters
Fresh cream - 125 grams
Lemon juice - 1 teaspoon
Salt - 1 teaspoon
Paprika - 1 teaspoon
Mixed herbs - 1 tablespoon
Chilli flakes - 1 tablespoon
Spinach - 80 grams
Coriander - for garnihsing
PREPARATION
1. In a mixing bowl, add 800 grams chicken breast, 15 milliliters olive oil, 1 teaspoon garlic, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon paprika and mix it well.
2. Marinate for 1 hour.
3. Take a pressure cooker, add 500 grams chicken, 500 milliliters water, 40 grams onions, 5 grams ginger, 5 grams garlic, 8 pods cloves, 2 star anise, 2 pods black cardamom, 1 cinnamon stick, 1 bay leaf and cover it with lid.
4. Cook till you hear 3 whistles.
5. Remove it from heat and strain the broth. Keep aside.
6. Heat 30 grams butter in a pan, add the marinated chicken breast in it and cook until it turns golden brown in color from all sides.
7. Remove it from heat and keep aside.
8. Heat 40 grams butter in a skillet, add 1 teaspoon garlic and stir well.
9. Then, add 40 grams all purpose flour and mix it well.
10. Add 60 milliliters whisky and mix it well.
11. Now, add the prepared chicken broth and mix it well.
12. Cook for 5 - 7 minutes on medium heat.
13. Add 125 grams fresh cream and mix it well.
14. Then, add 1 teaspoon lemon juice, 1 teaspoon salt, 1 teaspoon paprika, 1 tablespoon mixed herbs, 1 tablespoon chilli flakes, 80 grams spinach and mix it well.
15. Cook for 5 - 7 minutes on medium heat.
16. Now, add the cooked chicken breast in it and mix it well.
17. Cook for another 5 - 7 minutes on medium heat.
18. Garnish with coriander.
19. Serve hot.

- 1 Cup Sliced Corn
- 1 Cup Chopped Mushroom
- 1 Cup Chopped Broccoli
- 1.5 Cup Yellow & Green Zucchini
- 1.5 Cup Capsicum & Yellow Bellpeppers
- 1/2 Tsp Black Pepper Powder
- 1/2 Tsp Salt
Paprika Sauce
- 1 Tbsp Butter
- 2 Tbsp Refined Flour
- 500ml Milk
- 1 Tsp Salt
- 2 Tbsp Kashmiri Red Chilli Powder
- 100g Paneer Cubes
Pesto Sauce
- 500g Basil Leaves
- 7-8 Walnuts
- 15 Garlic Cloves
- 1/4 Cup Cheddar Cheese
- 2 Tbsp Olive Oil
- 1/2 Tsp Salt
Pesto Rice
- 2 Tbsp Olive Oil
- 2 Tbsp Chopped Garlic
- 1 Tsp Red Chilli Flakes
- 2 Tbsp Mixed Herbs
- 1 Cup Pesto Sauce
- 3 Tbsp Water
- 4 Cups Boiled Rice

MEMORIES OF MACEDONIA ~ SOLILO / SVIRIPILE (Macedonian Paprika Sauce) *Old recipe*
Solilo, or sometimes called Sviripile is an old Macedonian sauce recipe. So simple, yet very effective. This is great over roasted veggies, grilled meats, and even fish. In reality, served with bread is good enough for me! The sauce is made using the ground dried red peppers from the town famous for their peppers - Bukovo. However, if you can't find it where you live, use a very tasty paprika. You will love these flavours!

YOU NEED:
70 ml oil
4 tablespoons of red ground pepper (Bukovska piper)
Salt to taste
200 ml water (or more depending on taste)
1 tbsp. wine vinegar
1 Bay Leaf (Laurel)
Optional - a pinch of sugar
Optional - Dried mint and/or oregano to taste
FISH IN PAPRIKA SAUCE (Hungarian Paprika Sauce) | by Chef by Night
Let's prepare together this amazing dish - Fish in paprika sauce!
Ingredients:
Fish:
- 1.5 lb Cod fillet, or another firm, white fish.
- Salt and white pepper to taste.
Potatoes:
- 2 Russet potatoes.
- Salt and pepper to taste.
- 1 TBSP Butter.
Sauce:
- 17 fl oz Heavy cream (500ml).
- 3 TBSP Paprika.
- 1/2 TSP Salt.
- 1/2 TSP White pepper.
- 1/4 TSP Saffron.
Method:
- Cut cod in smaller pieces to make six portions. Season it generously with salt and white pepper to taste.
- Peel the potatoes. Wash them. Pat them dry. Slice them with a knife (0.5-inch thickness).
- In a bowl, add the heavy cream, paprika, salt, white pepper, saffron, and whisk the ingredients to incorporate.
- Melt butter in a medium frying pan. Add the potato slices, and season with salt and pepper to taste. Let them for 5 minutes each side.
- Place the potato slices into a baking pan.
- Add olive oil, place the fish and let them cook for 3 minutes. Flip the fillets and cook for one more minute.
- Place the fillets on top of the potato slices.
- Add the sauce into the pan, deglaze it using a silicone spatula, and cook for 3 minutes.
- Spread the sauce over the fish fillets and the potato slices.
- Cover the baking pan with aluminum foil.
- In a preheated oven (350F), bake it for 25 minutes.
