How To make Peanut Butter Oatmeal Cookies 2
3/4 c Shortening
1/2 c Granulated sugar
1 c Packed brown sugar
1 lg Egg
1/4 c Water
1 ts Vanilla extract
1/4 c Cocoa
1/2 c Peanut butter
1/4 c Molasses
1 c Flour
1/2 ts Baking soda
1 ts Salt
3 c Uncooked quick oats
Chopped nuts; optional Beat together with a wooden spoon, shortening, 2 sugars, egg, water, vanilla, cocoa, peanut butter and molasses until creamy. Combine flour, baking soda and salt and add to mixture. Add oatmeal and nuts, and blend well. Chill dough for 15 minutes. Drop by rounded teaspoonfuls onto greased cookie sheets. Bake at 350` for 12 to 15 minutes. Makes 4-5 dozen cookies.

A new variation of the classic no bake cookie: Peanut Butter No Bakes! These are all peanut butter without any chocolate - they're so easy and don't need an oven. They've been called the BEST cookies EVER by tasters!

INGREDIENTS
½ cup (113g) unsalted butter diced
1 ¾ cups (350g) granulated sugar
½ cup (118ml) nonfat milk
½ cup (133g) creamy peanut butter
1 teaspoon vanilla extract
¼ teaspoon salt
3 cups (243g) quick cooking oats
INSTRUCTIONS
Line two cookie sheets with parchment paper.
It’s very important that all your ingredients are measured and ready to go before you start and make sure you’ve read the directions before making these cookies. The process goes fast!
Melt the butter in a 3-quart saucepan over medium heat. Stir in the sugar and milk. Whisk until smooth then bring to a boil and cook for about 1 ½ minutes, stirring occasionally. NOTE: you MUST boil them long enough or they will not set. To be sure of this, boil the mixture until it reaches 230°F on a candy or instant read thermometer. If you do not have a thermometer, this will take about 1 ½ minutes on medium heat.
Remove from heat and stir in peanut butter, salt, vanilla, and oats.
Use a cookie scoop to drop 2 tablespoon size balls of cookie mixture onto the prepared baking sheets. Let sit to set or chill to harden quicker.

This recipe for no-bake chocolate oatmeal cookies is really easy to make using everyday ingredients. They don't take super long at all to make either. These chocolate cookies are incredible and they are gluten-free! Time to mix things up a bit and make some no bake cookies. If I can make them, you can make them. Let's get started! :)

Ingredients:
1/2 cup of unsalted butter (113g)
1/2 cup of milk (whole, 2%, 1%, etc.) (118mL)
1 1/2 cups of white granulated sugar (300g)
1/4 cup of unsweetened cocoa powder (30g)
1/4 tsp. of salt (1g)
1/2 cup of packed brown sugar (light or dark) (100g)
2 tsp. of vanilla extract (10mL)
1/2 cup of peanut butter (125g)

Today Julianne will share one of our friends' recipe for absolutely delicious oatmeal peanut butter chocolate chip cookies! These are just as incredible as they sound, but super easy to make! Follow along with this relaxing tutorial and learn how to make the world's most valuable cookies!

Some helpful notes:
1. Yes, Julianne used more vanilla than 1/4 teaspoon (because we LOVE vanilla) but the original recipe calls for 1/4 teaspoon, and we realize not everyone loves vanilla as much as we do. Use as much as you want????
2. This recipe has NO FLOUR in it...yay GLUTEN FREE!
3. DO NOT overbake these cookies...they will crumble. Take them out of the oven while they're still soft and they will set up.

The Most Valuable Cookie Recipe:
1/2 cup melted butter
1 cup cane sugar
1 cup +2 tablespoons brown sugar
3 eggs
2 cups creamy peanut butter
1/4 teaspoon vanilla extract
2 teaspoons baking soda
1/4 teaspoon salt
4 1/2 cups uncooked rolled oats
2 cups chocolate chips
Preheat the oven to 350 degrees Fahrenheit. First, add the sugars and butter into the mixing bowl.
Stir briefly to combine.
Then add the peanut butter, eggs, vanilla, baking soda and salt. Mix and scrape down the sides of the bowl as needed.
Then go ahead and add the oats. The dough will be quite stiff. Scrape down the bowl as needed and mix well.
Finally, add the chocolate chips and mix until fully incorporated.
Lightly grease a cooking sheet.
Pack the cookie dough into a 1/4 cup measuring cup and drop onto pan.
Using your fingers, gently press the dollops of dough into 3 inch circles. Keep in mind that these cookies will spread.
Bake for 8 to 12 minutes. Enjoy!

Ingredients
10 Tablespoons unsalted butter softened to room temperature (141g)
2/3 cup light or dark brown sugar tightly packed (135g)
1/4 cup sugar (50g)
1/2 cup creamy peanut butter I don’t recommend using natural peanut butter (140g)
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour (125g)
1 teaspoon cornstarch
3/4 teaspoon baking soda
3/4 teaspoon salt
1 cup quick oats (115g)
Instructions

00:35 Combine butter and sugars in a large bowl and use an electric mixer to beat until creamy and well-combined.
01:14 Add peanut butter and stir again until smooth.
Add eggs and vanilla extract and stir until well-combined.
01:49 In a separate bowl, whisk together flour, cornstarch, baking soda, and salt.
02:25 Add your flour mixture to your wet ingredients and stir (with mixer on low speed so that you don’t send flour flying everywhere!) until flour is completely incorporated into the batter. Be sure to scrape the sides and bottom of the bowl so that ingredients are well-combined.Add oats and stir well.
02:57 Cover your cookie dough with plastic wrap and transfer to the refrigerator. Allow dough to chill for at least 30 minutes (this dough may be chilled overnight if needed).While dough is chilling, preheat your oven to 375F (190C) and line cookie sheets with parchment paper.
03:22 Once dough has chilled, remove from the refrigerator and roll into 1 1/2 Tablespoon-sized balls and place on prepared cookie sheet, spacing cookie dough at least 2” apart.Bake on 375F (190C) for 10 minutes or until edges are just beginning to turn golden brown. Allow cookie dough to cool completely on cookie sheet before enjoying (the centers will continue to bake as they cool).
