Appetizer from bell pepper
INGREDIENTS:
- 2 colored peppers
- Half a bunch of dill
- 60-70 grams of cottage cheese
- 1 tablespoon of black cumin
- Salt
- Black pepper
PREPARATION:
Roast 2 bell peppers in a 300 degrees oven for 20-25 minutes.
For filling, add cottage cheese, chopped dill, black cumin, salt and black pepper to a suitable bowl and mix well.
Peel and clean the roasted bell pepper. Then cut into long strips. Put the stuffing on it and roll it into a roll.

Ingredients:
-1 cup roasted red peppers, diced
-1/4 cup onions, diced
-2 garlic cloves, minced
-¼ cup basil, chopped
-1/2 tsp black pepper
-2-3 tbsp olive oil
-1 medium baguette (I like to recommend Whole Foods baguettes)
Directions:
Combine all ingredients, except the bread, in a medium sized bowl to make your bruschetta mixture. Mix well.
Slice bread into 1-2 inch slices. Toast in the oven or toaster oven until lightly browned.
Top bread slices with 1-2 tbsp of the bruschetta mixture.
Optional: drizzle with more olive oil or balsamic vinegar. Enjoy!
Nutrition per serving (makes 6 servings; about 4 slices of baguette with ¼ cup of bruschetta):
-120 calories
-220 mg sodium (this will vary based on the bread you use! Feel free to use a lower sodium bread too)
-1 gm fiber
-3 gm protein
-55 mg potassium
