How To make Persimmon Spice Cake
4 to 6 very ripe, soft persimmons, yielding 1 1/4 cup pureed pulp
1 teaspoon baking soda
1/2 cup butter
1 cup sugar
1 egg
1 3/4 cups unsifted flour
1 teaspoon cinnamon
1/2 teaspoon each fresh nutmeg and ground cloves
1/2 cup walnuts
1 teaspoon each orange and lemon zest
Puree persimmons until smooth and stir in baking soda. Mix well. It will set. Weird but not to worry.
Beat butter and sugar until fluffy. Add egg and persimmon mixture. Combine flour and spices and add to persimmon mixture. Blend well, stir in nuts and zest. Spoon into a 9 inch greased cake pan. Bake at 350 for about 40 or more until knife comes out clean.
Before serving, sprinkle with powdered sugar
This recipe can be increased with no adverse effects, except perhaps your waistline. The cake freezes well, although don't powder sugar until it's time to serve.
The original recipe calls for 2 tsp of baking powder, to be added with the flour. However, it was rather serendipitous that our baker over looked it. The resulting cake is very moist and dense but not too heavy. You can try with the baking powder if you want. But our version omits it.

INGREDIENTS:
• 4 persimmons
• 2 tbsp maple syrup
• 1tsp ground cinnamon (
• 1/2 tsp ground allspice (
• 1/2 tsp ginger powder (
• 2 tbsps hot water
INSTRUCTIONS:
1. Preheat your oven to 350°F (175°C).
2. Cut the tops off the persimmons, peel them, and then slice them. Place the slices in a large baking dish.
3. In a small bowl, combine the maple syrup, ground cinnamon, ground allspice, and ginger powder. Stir in the hot water until everything is well mixed.
4. Pour this sweet and spiced mixture evenly over the persimmon slices in the baking dish.
5. Cover the dish with foil to keep the steam in, and bake the persimmons in the preheated oven for about 30 minutes or until they become tender.
6. Remove the foil, and spoon some of the syrupy liquid over the persimmons. Then, place the dish under the broiler for approximately 10 minutes or until the persimmons are nicely browned.
7. Serve your delightful Ginger-Spiced Baked Persimmons immediately and enjoy!

Persimmon cake: a fluffy dessert to try!
INGREDIENTS
4 eggs
120ml Oil
80g Sugar
300g Flour
120g Chocolate chips
300g Persimmon
16g Baking powder
Icing sugar
METHOD
Pour the eggs into a bowl, add oil, sugar, and mix. Add persimmon pulp and mix again.
Add chocolate chips, flour, baking powder, and mix again. Pour into a circular baking tray.
Bake for 30 minutes at 180 ºC (356ºF) Use a toothpick to check that it is cooked. Sprinkle with icing sugar to serve.
