How To make Piquant Meatloaf with Mushroom Gravy
1 1/2 lb Ground beef
1 ts Salt
1/8 ts Pepper
1/4 ts Paprika
1/4 ts Oregano
1/4 ts Thyme
1/8 ts Garlic powder
1/8 ts Chili powder
1 ts Parsley flakes
3/4 c Evaporated milk
1 Egg
1/2 c Cracker crumbs
1/4 c Onions - chopped
SAUCE:
1/4 lb Mushrooms - sliced
3 tb Unsalted butter
2 1/2 tb Flour
1 ts Onions - chopped
1/2 ts Paprika
1/2 ts Salt
3/4 c Cream
3/4 c Beef broth
Contributed to the echo by: Fred Towner Originally from: Calgary Suns Great Meatloaf Recipe Search - Monday June 4, 1990 Submitted by Lidia Barwis Piquant Meatloaf with Mushroom Gravy LOAF: Sprinkle meat with salt, pepper, paprika, oregano, thyme, garlic powder, chili powder and parsley flakes. Toss with fork to mix. Combine evaporated milk and egg in bowl, stir in cracker crumbs and let soak for 5 minutes. Add to ground beef mixture with onions and mix well. Bake in 350F oven for 1-1/4 hours. GRAVY: Saute mushrooms and onions in butter until limp. Combine flour, salt and paprika. Blend with mushrooms. Stir in broth and cream. Cook until thick and bubbly. Serve over sliced meatloaf. Servings: 6

Ingredients you need to make a Sauce forestiere (forest mushroom sauce)
For 4 people:
300 grams of forest mushrooms at least 3 different variety ( The best to use are cepes mushrooms
20 grams plain butter
30 grams shallots (finely diced)
500 ml of cream (heavy whipping cream or double cream)
300 ml of demi-glace (heavily reduced brown stock)
lemon juice to add some zing (optional)
2 tablespoon of cognac to a luxurious accent to the sauce(optional)

Swedish Meatless Balls (Plant based)
These meatless balls are Swedish inspired and delicious!
Swedish Meatless Balls
2 cups sliced mushrooms sauted
1 small onion chopped sauted
1 cup of canned or cooked brown lentils
1-2 tbsp. garlic powder
1 tsp dried parsley
Pinch of allspice
(nutmeg too if you're feeling bold!????)
2 tbsp low sodium sauce
1 tsp spicy mustard ( or 1 scant tbsp)
Salt ( or salt substitute) & pepper to taste
3/4 cup gf or regular whole wheat breadcrumbs
( you can add less about 1/2 cup depending on how wet your mixture is.)
(I wouldn't recommend gf if you're baking them WFPB no oil)
OR
¾ cup oat flour (I believe this may work better for WFPB no oil )
1-2 runny flax eggs (if u add 3/4 of breadcrumbs use 2 flax eggs= 2 Tbsp of ground flaxseed +5-6 Tbsp water)
Sauté your onions and mushrooms I chopped them roughly while in the pan cook in a little good quality veggie broth( or oil if you aren't oil free).
In your food processor add your onions, lentils and mushrooms and pulse until you get a mincemeat texture.
Put the filling/mixture in a bowl and mix in the spices, and condiments (note: the Mustard add tanginess so add according to your taste buds) and add breadcrumbs or oat flour.
I added 2 flax eggs for maximum binding. Form meatballs.
Baking/Cooking Instructions
For Oil-Free
Bake at 425F on parchment lined or greased pan for 20-25 minutes flipping midway.
OR
On the stovetop shallow fry/sear in pan with a little oil, finish off in the oven at 350F 10-12 minutes, for crisper turn heat up to 400 and cook for 3-5 more minutes.
You can also bake them sprayed with a little oil spray.
Here's my gravy I used in the video ( recipe not filmed)
Gravy
1 cup of veggie or vegan beef-less broth
1 cup of water
1 tbsp. garlic powder (and a little onion powder or sauted onion if you have it!)
sprinkle of black pepper
1-2 tbsp. of low sodium soy sauce
1-3 tbsp. oat flour (enough to thicken it)
Add ons
4-6 oz mushrooms (optional)
dash of mustard (optional)
additional sea salt
Cook whisking together until thickened.
Serve them smothered in your favorite gravy or the one provided on pasta or a bed of mashed potatoes.
