How To make Pistachio Kulfi Pops
1 1/2 qt Whole milk
1/3 c Sugar
1/2 c Shelled roasted pistachios
8 Paper cups
-OR Cooking parchment -OR Waxed paper 8 Ice cream sticks (opt)
In a 6-8 quart pan over high heat, stir milk and sugar until simmering. Over medium-high heat, boil until reduced to 2 cups, 25-35 minutes, stirring often; slide pan partially off heat if milk threaten to boil over. Let cool; to speed cooling, set pan in ice water. Coarsely chop pistachio nuts; stir into cooled reduced milk mixture. Set paper cups in a rimmed pan. Or, to make cones, cut 8 pieces of parchment or waxed paper into 7-1/2" squares. Fold each piece in half to make a triangle. With long edge toward you, bring 1 of the 45' angles to the top of the triangle, then roll toward other angle. To close hole at bottom, starting from the top, press 1 inside sheet to tyhe opposite side. Tape the cone in a few places to hold it together. Support each cone, pointed end down, in a cup slightly taller than the cone; set cups in a rimmed pan. Divide milk mixture among cups or cones. Freeze until kulfi is thick but not hard, 1 to 1-1/2 hours; then, if desired, push an ice cream stick into each container. Freeze until firm, about 2 hours longer. To eat, peel off paper. To store, seal kjulfi (still in cups or cones) in a parge plastic bag; freeze for up to 2 weeks. Per serving: 190 calories; 7.7 grams protein; 10 grams fat; (4.3 grams saturated fat); 19 grams carbohydrates; 90 milligrams sodium; 26 milligrams cholesterol.

Pista Badaam Kulfi
Recipe in English:
Ingredients:
-Doodh (Milk) 1 litre
-Zafran (Saffron) 10-12 strands (optional)
-Elaichi powder (Cardamom powder) ½ tsp
-Condensed milk 200 ml
-Badam (Almonds) crushed 2-3 tbs
-Pista (Pistachios) crushed 2-3 tbs
-Khoya 100 gms
Directions:
-In pot,add milk and cook until milk is reduced to half (20-30 minutes on low flame) and keep stirring in between.
-When milk is thickened and reduced,add saffron,cardamom powder,condensed milk and mix well.
-Add almonds,pistachios,khoya and mix well.
-Let the mixture cool then refrigerate for 1 hour.
-Put the mixture in jar and pour into popsicle molds and freeze for 4-6 hours.
-Pista badam kulfi is ready to serve.

-Jab doodh garha aur kum ho jaye tou zafran,elaichi powder aur condensed milk dal ker ache tarhan mix ker lein.
-Badam,pista aur khoya dal ker ache tarhan mix karein.
-Mixture ko thanda ker lein phir 1 hour kliya refrigerate ker lein.
-Mixture ko jar mein dal ker popsicle molds mein pour ker dein aur 4-6 hour kliya freeze ker lein.
-Pista badam kulfi serve kerna kliya tayyar hai.

250g Pistachio paste
1 can (400g/14oz) Sweetened condensed milk
2 cup (480ml) Heavy cream, cold
Vanilla extract (optional)
Directions:
1. Make pistachio paste: peel the pistachios from the shell. Then place them in a clean kitchen towel and shake to remove as much skin as possible.
2. Place the pistachios (250-300g) in a powerful blender and blend until smooth and creamy. This process may take 10-15 minutes (depending on your blender) so be patient. Transfer the paste into a bowl, if in this stage the paste is warm place in the fridge.
3. In a large bowl, place cold heavy cream. Whip to stiff peaks. Add sweetened condensed milk, pistachio paste and whisk on low speed until incorporated. Chop 1/4 of pistachios and add to the ice cream, gently fold. This step is optional.
4. Transfer into a freezer-safe container and freeze for at least 6 hours or overnight.
5. Serve!

Kulfi is a non churned ice cream dessert. In this shortcut recipe, I skip the cooked version and present an easy way to make this recipe by using whipped cream.

Ingredients
200 ml whipping cream
1 cup sugar
370 ml can Evaporated milk
Seeds of 3 cardamoms crushed
1/4 cup powdered pistachios
1/4 cup sliced pistachios
Green food colouring (optional)
Process
In a chilled mixing bowl, whisk the cream till thick and fluffy and add the sugar at intervals
Remove and scrape into another chilled bowl and refrigerate
In the same mixing bowl, whisk the Evaporated milk, cardamom seeds and powdered Pistachios
Add the tiniest bit of food colouring
Fold the cream into the Evaporated milk mixture
Pour into moulds and cover with a square of foil with a slit in it
Freeze for a half hour till semi set
Remove and add the sticks through the slits
Freeze for a few more hours or overnight till fully frozen
Remove from mold and serve
