INGREDIENTS
-2 Tbsp olive oil
-1 clove garlic, minced
-28 oz. can crushed tomatoes
-6 oz. can tomato paste
-1/2 Tbsp sugar
-3/4 tsp salt
-1 tsp basil
-1/2 tsp dried oregano
-Freshly cracked pepper
-Pinch crushed red pepper, optional
INSTRUCTIONS
1. Add the olive oil and garlic to a sauce pot and cook over medium heat for 1-2 minutes, or just until the garlic is soft and fragrant.
2. Add the crushed tomatoes, tomato paste, sugar, salt, basil, oregano, some freshly cracked pepper (10-15 cranks of a pepper mill), and a pinch of red pepper flakes. Stir to combine.
3. Cover the pot, allow the pot to come to a simmer, then reduce the heat to low, and let simmer for 15 minutes minimum, or up to 30 minutes (I often let it simmer as I prepare my pizza dough).

400 grams (2½ cups) all purpose flour
250 grams (1 cup) lukewarm water
5 g (1½ teaspoon) instant dry yeast
15 grams (1 tablespoon) sugar
5 grams (1 teaspoon) salt

1 - 2 cloves garlic minced
1 pinch salt
1 handful parsley chopped

4 tablespoons vegan stracchino cheese
1 - 2 tomatoes
1 teaspoon dried oregano

a drizzle of olive oil

1 serving sun-dried tomato pesto
1 - 2 handful mixed salad leaves (we use radicchio and watercress)
1 - 2 tbsp pitted olives
1 - 2 tbsp soy yogurt plain and unsweetened

⅓ cup sun-dried tomatoes chopped
1 - 2 handfuls mixed salad leaves (we use arugula and watercress)

Ingredients:
1 Dense country bread, sliced
1 tbsp extra-virgin olive oil
1/2 cup stracciatella
8-10 marinated sun-dried tomatoes
1 tsp maldon salt
Salsa Verde:
1 bunch parsley
6-7 basil leaves
2 tbsp capers
6-8 anchovy fillets
1 garlic clove
4 tbsp olive oil
1/2 lemon, juice
To make your salsa verde, use a hand blender to blend the parsley, basil, capers, anchovy fillets, garlic clove, olive oil, and lemon juice. Blend until smooth.
Slice 2 pieces of bread about 1/2 inch thick. Toast in a pan and lightly drizzle the bread with olive oil on both sides. Remove from pan once crisp and golden. On each slice of bread, add a layer of stracciatella, sun-dried tomatoes, and drizzle some salsa verde on top. Finish with a sprinkle of maldon salt. Enjoy!
