Lemon poppy seed loaf with recipe (柠檬罂粟籽蛋糕)
Ingredients:
120g butter
3/4 cups of sugar
1tsp lemon zest
2 cups of self raising flour
2 eggs
1/4 salt
1/4 cups of lemon juice
1/4 Chopped peanuts
1 tsp poppy seeds
Mix butter, sugar and lemon zest until smooth. Add eggs and mix well. Sift flour, lemon juice and salt into the mixture and mix. Add the poppy seeds and walnuts and mix until no dry flour.
Preheat the oven 180 degrees
Bake for 45-50 minutes
Icing: mix lemon juice and icing sugar until it forms a consistency of tomato sauce.
How to make 1 cup of self raising flour:
Mix 1 cup plain flour, 1/2 tsp salt and 1.5 tsp baking powder.

Easy Orange Poppy Seed Cake
This Orange Poppy Seed recipe is brought to you by popular demand! On my daughter's recent 15th birthday, she requested an orange poppy seed cake and I could not find the recipe to a flourless one I used to make - nor did I have any almond flour, as it turned out. So this poppy seed cake was invented from fly-by-the-seat-of-my-pants sort necessity. And it worked out beautifully!
You can substitute a number of the ingredients to tailor the cake to suit your needs. I highly recommend that you use melted coconut oil instead of vegetable oil (it's much healthier, and will give a lovely flavour). You can replace half the flour with almond meal (or hazelnut meal), and add an extra egg to encourage lightness and fluffiness. Of course, you could make this cake 100% flourless - though you will end up with a denser cake. If you do this, I recommend puncturing some holes with a skewer in your baked cake, and pouring over some orange juice or a simple sugar/citrus glaze so that your cake doesn't dry out.
Lastly, feel free o use a stevia/erythritol blend instead of butter for a sugar-free version. Or use coconut sugar for a more naturally sweetened version (though coconut sugar will still be counted as sugar as far as calories are concerned).
Recipe:
2 boiled whole oranges (simply put them in a pot of water and boil for 10-15 minutes), blended to a puree in a food processor or with an immersion
blender.

1 cup sugar
2 cups self-raising flour
2 teaspoons baking powder
1 teaspoon vanilla extract
1 teaspoon orange water or extract (optional)
2/3 cup oil (preferably melted coconut)
1/4 cup poppy seeds
Whisk egg into orange puree well, and then add all other ingredients. Mix well and place in a greased deep cake pan. Bake at about 160degC (depending on your oven) for around 45 minutes, until top starts to crack, is springy to the touch, and golden.
Ice with your favourite cream cheese frosting, or cover in a citrus glaze.
Absolutely delicious with chocolate ice-cream (there's just something about choc-orange, isn't there?).

Recipe
175g butter
175g caster sugar
Zest of 2 lemons
3 eggs
250g self-raising flour
50g poppy seeds
4 tbsp natural yogurt
Cream cheese icing
100g cream cheese
1 tbsp caster sugar
2 tsp lemon juice
1 tbsp natural yogurt
1. Preheat the oven to 150°C. Line a loaf tin.
2. Whisk together the butter and sugar until light and creamy. Add in the eggs and lemon zest, mix well. Fold through the flour, poppy seeds and yogurt until well combined.
3. Pour into the prepared loaf tin and bake for 1 hour and 10 minutes. Cool
4. For the icing mix together the cream cheese, caster sugar, lemon juice and yogurt until light and creamy. Spread over the top of the cooled loaf cake.

Spelt Orange Poppy Seed Muffins
Spelt orange poppy seed muffins are not too sweet, zingy, moist and delicious. Not into spelt flour, this orange poppy seed muffin recipe is easily adaptable to add your choice of flour. This muffin recipe is a 'one bowl, quick mix, quick bake' ready in 35 minutes from start to finish. In my video, I used a combination of white spelt flour and wholegrain spelt to make them a little healthier. Feel free to make this muffin recipe with your favourite flour or what you hand in your cupboard. If you'd like to use self-raising flour (the UK and Aust.) please omit the baking powder.
These spelt orange poppy seed muffins are not only fluffy and moist on the first day but stay moist for a few days.
