Hong Kong Style Baked Pork Chop Rice 港式焗猪扒饭 Cheese & Tomatoes over Chinese Fried Rice | Chinese Rice
Baked Pork Chop Rice is a popula dish in Hong Kong. Some of the restaurants or cha chan teng (Hong Kong's local cafes) serve the pork chop in tonkatsu style but in an effort to make this dish healthier, Roland opted for pan-frying instead. Like the restaurants in Hong Kong, Roland cooked a simple fried rice as a bed for the pork chop to rest on, followed by his very delicious tomato based sauce. Finally, this yummy combo is then topped off with a lot of mozzarella cheese and baked to perfection. My tummy is growling as I'm writing this. Haha.

Ingredients:
Serves 6 pax
Marinated Pork Chop

4 pcs of pork loin/pork chop (total weight 330g)
2 pcs of lightly smashed garlic
half a thumb size of lightly smashed young ginger
4 tablespoons of light soy sauce
3 tablespoons of Chinese white rice wine
3 tablespoons of cornflour
Fried rice
----
8 beaten eggs
6 cups of cooked rice (from 3 cups of uncooked rice)
2 teaspoons of chicken stock powder
2 teaspoons of salt
2 tablespoons light soy sauce
A few dashes of white pepper or black pepper
Tomato based sauce

1 big red onion - sliced
2 shallots - sliced
2 cloves of garlic - chopped
3 thinly sliced fresh button mushrooms
1 whole tomato - cut into wedges
2 tablespoons of tomato paste
1 cup of water
1/2 teaspoon of sugar
1/2 teaspoon of salt
Some cornstarch solution
Others

3/4 cup of mozzarella cheese
Bake the dish at 180C for 10 mins, followed by 200C for 5 mins - total 15 mins bake time.

3 cloves garlic
1 tsp fresh thyme
1/2 onion
6 slices smoked bacon
????Seasoning
1 tbsp cajun
1 tbsp paprika
2 tsp garlic powder
1 tbsp complete season
1 tsp black pepper
1 tsp poultry seasoning
1/2 tsp black pepper
3 1/2 cups Basmati rice
4 cups hot water
1 tbsp sazon season
4 cups hot water

Ingredients:
This recipe is for a family of 2. This can easily be adapted for a family of 2 to a family of 10. Adjust the amount of ingredients for the amount of people you will be feeding.
3 center cut Pork chops
butter and oil for frying
flour for breading
salt & pepper to taste
1 tsp or to taste Kinders buttery poultry blend
1 medium onion, diced
3 cups cooked rice
1 4 oz can diced green chilis
1 tsp parsley
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp cayenne pepper
1 can cream of celery soup, or your favorite (1 can per 3 cups of cooked rice)
Preheat oven to 375 degrees.
In a skillet, heat oil and butter. Add diced onion and saute just until tender. In a separate bowl, add cooked rice, green chilis, parsley, onion powder, garlic powder, and cayenne pepper. When onions are tender, stir into rice mixture. Spread rice into a casserole dish that has been sprayed with non-stick cooking spray. Set aside.
In a bowl or a pie plate, add flour. Sprinkle with salt and pepper to taste. Sprinkle in buttery poultry blend. Coat pork chops in flour dredge. Add more oil to pan if needed to fry pork chops. When oil is hot, add chops and fry until browned on both sides. Don't worry if the chops are not done. They will continue to cook in the oven.
After chops are browned, lay on top of the rice. Bake in oven for 30-35 minutes. Serve with your favorite vegetable.

Slow cooker pork chops and rice with cheese is a great dinner, is one of the easiest meals to make, and won't break the bank. The recipe is a great way to take pork chops and jazz them up a bit to create a filling, hearty, and nutritious meal for the family.

This one-dish meal is tasty and doesn't require much preparation. The rice cooks with the pork chops making clean-up easy. I did find that it took longer to cook than my original recipe stated. On the recipe below I added that I cooked it longer. If you take it out and it looks watery just leave it longer and the rice absorbs the liquid. Add a salad and your meal is ready.
