SKILLET PORK LOIN CHOPS OVER SAUTEED CANNELLINI BEANS AND BABY SPINACH | RICHARD IN THE KITCHEN
In this video I show you how to make cast iron marinated bone-in pork loin chops seasoned and seared perfectly and served over a bed of sauteed Cannellini Beans and baby spinach. Easy and delicious recipe finished off with homemade garlic herb butter and served with garlic bread.
Shopping List:
3/4 to 1 lb. bone-in pork loin chops about 1 to 1 1/4 inch thick
2 cups of COOL water per 2 chops.
1 tbsp. kosher salt, or if using table salt use 1/2 that much
1 tbsp. white sugar
Liberal rub of all season salt (store-bought or homemade. See below for the homemade recipe)
1 tbsp. canola or vegetable oil
1 tbsp. salted butter per chop
1 15.5 ounce can of Cannellini beans, drained and rinsed of packing fluid
Fresh baby spinach, about 1 ounce per serving of meat
Salt & pepper
Drizzle of olive oil
Pats of garlic herb butter (see link below for how to make homemade recipe)
Homemade Seasoning Salt: (Makes about 2 ounces)
1/4 cup Kosher salt
4 tsps. ground black pepper
1 tsp. dried parsley
1 tsp. paprika
1 tsp. garlic powder
1 tsp. onion powder
1/2 tsp. red pepper flakes
Homemade Garlic Herb Butter
HOMEMADE GARLIC BUTTER WITH FRESH HERBS | RICHARD IN THE KITCHEN
Directions:
Place the chops is a zip-lock bag. Add the water, salt and sugar. Seal and shake well. Marinate 3 hours to overnight in the fridge.
If making your own rub, pre-make, seal and set aside. (see homemade recipe above)
After the chops have marinated, pat dry and allow to come to room temp (about 30-45 minutes then liberally apply the rub. Trim excess fat if you desire.
Heat a heavy cast iron skillet over medium heat to a surface temp of 375-400. Brush on the oil.
Add the chops to the hot skillet and sear 3 minutes then add the salted butter. When it melts spoon it over the chops. Flip and sear the other side for 3 more minutes then remove and set aside.
Reduce the heat to medium low and add the drained and rinsed Cannelli beans and roughly chopped baby spinach to the skillet. Season lightly with a drizzle of olive oil, and a pinch of kosher salt and white or black pepper. Toss to combine for about 2 minutes.
Add the chops to the beans and spinach mixture and cook for about 4 more minutes or until the internal temp of the chops is 145 with a digital probe thermometer.
Remove the chops and allow to rest at least 5 minutes. Top with a pat of garlic herb butter
Spoon the beans/spinach mixture into serving plates and top with the chops.
Serve with garlic bread.

Pork chop with white beans, rosemary, and apple
Ingredients
- 4 pork chops
- pork seasoning (1 tsp each salt, ground cumin, ground coriander seeds, smoked paprika, mustard powder, and a few grinds of black pepper)
- 1/4 head red cabbage, thinly sliced
- 1 red onion, thinly sliced
- 2 green apples, diced
- 1 large sprig of rosemary, finely chopped
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 500ml (approx. 2.1 cups) chicken stock
- salt and pepper, to taste
- 500g (2 cups) cooked white beans
- dill, for garnish
- optional: fennel pollen, for garnish
Method
1. To prepare the white beans and cabbage, heat the olive oil in a pan. Once hot, add the onions and sauté for 3 minutes.
2. Add the rosemary and season with salt.
3. Incorporate the cabbage, vinegar, and stock, seasoning again with salt and pepper. Simmer for 10 minutes.
4. Season the pork chops and grill over medium-high heat for 6-8 minutes on each side. Allow them to rest for 6 minutes after cooking.
5. Once the cabbage has simmered for 10 minutes, stir in the apples and white beans. Heat until the beans are warmed through.
6. To serve, plate some of the bean mixture, garnish with dill, and place a pork chop on top.
7. Drizzle with a splash of high-quality olive oil. Enjoy!

Ingredients and recipe:
685g Boneless pork chops
Cut the pork into cubes
Salt
Black pepper
Garlic powder
Paprika
Mix well
Set aside for 20 minutes
Medium heat
Olive oil
Place the meat into the pan
Fry for about 5 minutes
Flip over and fry for another 5 minutes
Remove from the pan
1tbsp unsalted butter
3 cloves of garlic
1tbsp soy sauce
1/4 cup honey
2tbsp cooking wine
Add the meat back to the pan
Stir fry for about 2 minutes
Remove from the pan
Parsley
Super tasty and delicious!
