Thai Red Curry Prawn | Restaurant Style
This easy Thai red prawn curry is a fantastic combination of king prawns, vegetables, coconut milk, and creamy curry sauce. With this fast and simple recipe, you can make restaurant-quality delicious prawn red curry in 30 minutes without much hassle!

Ingredients
▢400 gram Prawns About 14oz prawns/shrimp, peeled & deveined.
▢400 ml Coconut milk Divided in 200ml, see details in note
▢3-4 tbsp Red curry paste See details in note
▢250 ml Water About 1 cup, add more or less to desire consistency
▢2 tbsp Fish sauce Or salt to taste
▢1 stalk Lemongrass Bruised
▢2 tbsp Brown sugar Or palm sugar or white sugar
▢½ Bell pepper Red bell pepper, cut thin slices
▢100 gram Bamboo shoots Canned/tinned bamboo shoots (3.5oz)
▢Handful Basil leaves Thai / Italian or Regular Basil
▢100 gram Green beans Or long beans (3.5oz)
▢1 tsp Lime zest Or 3 kaffier lime leaf
To serve
▢Lime wedges
▢Coriander
Instruction
Add half of the coconut milk from tin and bring it to simmer and add red curry paste and cook until oil start to separate.
Then pour the rest of the coconut milk and water.
Simmer and add the lemongrass. Season with fish sauce and brown sugar.
Add prawns, bamboo shoots, and green beans.
Cook until vegetables are soft.
Next add the lime zest, bell peppers and finish with basil leaves.
Serve with plain jasmine rice or coconut rice.

Ingredients for Prawn Curry :
- Prawns, medium sized (cleaned and deveined) - 500 gms gross- 250-300 gms net
- Onions, fine chopped- 2 small
- Ginger garlic paste- 1 tsp
- Tomatoes, fine chopped- 2 small
- Green chillies, slit & cut- 2
- Salt- 3/4 tsp or to taste
- Turmeric powder- 1/4 tsp
- Red Chilli powder- 2 tsp or less as per taste
- Coriander powder- 1/4 tsp
- Cumin powder- 1/2 tsp
- Garam masala powder- 1/2 tsp (Link to our Garam Masala Recipe:
- Coconut milk- 1 cup (of a quarter coconut or readymade)
- Coriander leaves, chopped- 1 tbsp
- Oil- 2 tbsp
Preparation:
- Shell, devein and wash the prawns. Let the water drain from the prawns.
- Chop the onions and the tomatoes, slit and cut the green chillies.
- Take out coconut milk from a quarter of a coconut or use fresh coconut milk available in stores.
Process:
- Heat 2 tbsp oil in a kadai and add the chopped onions.
- Fry on medium to low heat till translucent( around 8-10 mins) and then add the green chillies.
- Add the ginger garlic paste. Mix and fry for around 2 mins till raw smell is gone.
- Add the chopped tomatoes, mix and add the salt. Cook for around 5 mins till tomatoes are soft.
- Add all the powders other than garam masala powder.
- Mix and add 1/2 cup of water. Bhuno on medium for around 2-3 mins till the masalas are cooked.
- Now add the prawns and mix well. Fry for around 5 mins on medium heat.
- Add the coconut milk, let it come to a boil, lower the heat to low and cover & cook for around 10 mins.
- Now add the garam masala powder, mix & sprinkle chopped coriander leaves.
- Serve hot with roti or rice.

- Tomatoes, sliced- 2 small
- Green chillies, slit & cut- 3
- Salt- 3/4 tsp or to taste
- Turmeric powder- 1/4 tsp
- Red Chilli powder- 1.5 tsp
- Kashmiri Chilli Powder - 1 tsp
- Cumin powder- 3/4 tsp
- Garam masala powder- 1/2 tsp
- Coconut milk- 150 ml (of a quarter coconut or readymade)
- Coriander leaves, chopped- 1 tbsp
- Oil- 2 tbsp
Preparation:
- Shell, devein and wash the prawns. Let the water drain from the prawns.
- Grate the onions and slice the tomatoes, slit and cut the green chillies.
- Take out coconut milk from a quarter of a fresh coconut or use packaged coconut milk available in stores.
Process:
- Heat 2 tbsp oil in a kadai and add the grated onions.
- Fry on medium heat for around 8-10 mins till light brown and then add the ginger garlic paste
- Mix and fry for around 2 mins till raw smell is gone.
- Add the sliced tomatoes, mix and add the salt. Cook for around 2-3 mins till tomatoes are little soft.
- Add all the powders other than garam masala powder. Stir and cook on medium heat for 2-3 mins till the tomatoes are soft.
- Mix and add 100 ml water. Cook on low heat for around 2-3 mins till the masalas are cooked and oil separates.
- Now add the prawns and mix well. Fry for around 2 mins on medium heat.
- Add the coconut milk, slit green chillies and the garam masala powder. Give a stir and cover & cook on low heat for around 10 mins till oil separates.
- Now season with a pinch of salt and garnish with chopped coriander leaves.
- Serve hot with roti or rice.

Ingredients for Prawns Masala Gravy:
- Prawns - Net 500 gms (medium to large, shelled & deveined)
Dry Roasted Spices:
- Cumin Seeds- 1 tsp
- Mustard Seeds- 1/2 tsp
- Fenugreek (Methi) seeds- a pinch
Masala Paste:
- Kashmiri Chillies (soaked in hot water and drained)- 7-8
- Coconut pieces- 50 gms
- Dry Roasted Spices- mentioned earlier
Tempering:
- Curry Leaves- 15-20
- Green Chillies- 2-3 slit
Spice Powders:
- Turmeric Powder- 1/4 tsp
- Red Chilli Powder- 2 tsp
- Coriander Powder- 1.5 tsp
- Garam Masala Powder- 1/2 tsp
Other Ingredients:
- Onions, chopped- 2 medium (150 gms)
- Ginger Garlic paste- 2 tsp
- Tamarind Juice- 4 tbsp
- Oil- 4 tbsp
- Salt- 1 tsp
Preparation:
- Shell, devein and clean the prawns, set aside.
- Soak the Kashmiri Chillies in hot water in a bowl for 30 mins till soft.
- Dry roast the cumin, mustard and fenugreek (Methi) seeds on low heat for 2-3 min. Take out in a plate to cool.
- Also take out 50 gms coconut pieces, you can also use grated coconut .
- Now add all these items to the grinder and first coarse grind it. Now add around 4 tbsp water and blend it into a paste.
- Soak one small lemon sized ball of tamarind in warm water and take out 4 tbsp tamarind juice. You can also use readymade tamarind paste but use less since that’s usually more sour.
- Chop the onions and slit the green chillies.
Process:
- Heat oil in a kadhai/wok and add the curry leaves & slit green chillies.
- Give a stir and then add the chopped onions. Fry on medium heat for 10-12 mins till light brown.
- Add the ginger garlic paste and fry on low heat for 2 mins till raw smell is gone.
- Now add the Masala Paste, 1/2 cup water and 1/2 tsp salt.
- Fry on medium heat for 5-6 mins till the masala is fried and oil separates.
- Now add all the spice powders and tamarind juice, give a mix and fry on medium to low heat for 4 mins till the masala is cooked and oil separates.
- Now add the deveined prawns and give a mix. Add 1/2 tsp salt and mix & fry on medium heat for 2-3 mins.
- Now add 250 ml water, mix and cover and cook for 10 mins.
- Remove cover and serve hot with roti or rice.
