1 pk Cake mix; spice flavor
- 18 1/4 oz. 1 c Pumpkin, canned
1/2 c Vegetable oil
1 pk Vanilla pudding mix; instant
3 Eggs
1 ts Cinnamon
1/2 c Water
12 c Pecans; chopped
Powdered sugar Combine all ingreds except nuts & pwd sugar. Blend well, then beat 5 min. Fold in nuts. Grease & flour Bundt pan. Bake @ 350 for 45 min. Cool in pan 15 min. Remove from pan & sprinkle with powdered sugar when cool. Posted on

Learn how to make a delicious pumpkin spice bundt cake made with pumpkin puree and with a cranberry-apple filling.
Ingredients:
1 Large Granny Smith Apple, Peeled & Diced (About 1 Cup)
3/4 Cup Chopped Pecans (84g)
1/2 Cup Chopped Dried Cranberries (60g)
1/2 Cup Packed Light Brown Sugar (96g)
2 Tablespoon Melted Butter (30ml)
3 Tablespoons All Purpose Flour (22.5g)
3 Cups All Purpose Flour (360g)
2 Teaspoons Baking Powder (10g)
2 Teaspoons Pumpkin Pie Spice (3.4g)
1/2 Teaspoon Baking Soda (2.5g)
1 Cup Butter, Softened (224g)
1 1/2 Cups Sugar (288g)
4 Eggs
1 Tablespoon Vanilla Extract (15ml)
15 oz. Pumpkin Puree (425g)
Directions:
1. In a small bowl, stir together the apples, pecans, cranberries, brown sugar, melted butter, and 3 tablespoons of flour, until well combined. Set aside.
2. In another bowl, whisk together the flour, baking powder, pumpkin pie spice, and baking soda. Set aside. In a large mixing bowl, beat the butter and sugar until creamy. Add the eggs one at a time, mixing just until combined. Add the vanilla and pumpkin and mix just until well combined. Add the flour mixture in two additions.
3. Prepare a 10 inch bundt cake pan with butter and dust with flour. Spoon half of the batter into the pan. Spoon the cranberry-apple mixture into the batter. Spoon the remainder of the batter into the pan covering the apple mixture completely. Smooth out top. Bake in a preheated oven at 325F for about 1 hour 10 minutes, or until a long pick inserted in the center of the cake comes out clean. Let cool in pan for about 15 minutes, then remove from pan to a wire rack and cool completely.

Cooking spray
3 tablespoons unsalted butter
1 cup chopped Pecans or walnuts
1/2 cup brown sugar
3 eggs
1/2 cup oil (vegetable, corn, canola, avocado)
1 cup milk
1 15oz can pumpkin puree
1/2 tablespoon cinnamon
1 teaspoon pumpkin spice
1 box of yellow cake mix
:
1. Preheat the oven to 350°
2. Spray a Bundt pan with baking or cooking spray. To the bottom of the Bundt pan add the sliced unsalted butter, chopped pecans and brown sugar. Put that in the oven for 5 minutes until the butter and brown sugar melts.
3. While that’s in the oven make the cake mix. First crack 3 eggs in a large bowl then add the oil, milk and mix until well combined. Next add the pumpkin puree, cinnamon and pumpkin spice and mix it again until well combined.
4. Lastly add in a box of yellow cake mix and mix really well. Take the Bundt pan out of the oven and pour the cake mix right on top of the pecans.
5. Put it in the oven and bake for about 35 to 40 minutes or until a toothpick comes out clean. After it comes out of the oven let it cool down for about 10 minutes flip and enjoy.

Pumpkin Bundt Cake
1 (15.25 oz Box) Yellow Cake Mix or Spice Cake Mix
1 (15 oz Can) Pumpkin Puree (not pumpkin pie filling)
4 Large Eggs at Room Temperature
1/2 C. Milk (Whole or 2 %)
1/3 C. Vegetable Oil
1 T. Ground Cinnamon
1 t. Ground Ginger
1/2 t. Nutmeg
1 t. Ground Cloves
Optional:
1 C. Semi-Sweet Chocolate Chips
or
1 C. Chopped Walnuts
or
1 C. Chopped Pecans
Bake in a 10 C. Bundt pan @350 degrees 55-65 minutes or until tester comes out with just one crumb or no crumbs. Cake will be golden brown.
Top with powder sugar or cream cheese frosting (recipe below)
Cream Cheese Frosting:
1 (8 oz block) Soft Cream Cheese
1 & 1/2 Sticks Soft Salted Butter (12 Tablespoons)
1 & 1/2 C. Confection's Sugar
1 t. Vanilla Extract
(1-2 Tablespoons of milk if need be)
Refrigerate frosting while cake cools. Also, be sure to refrigerate any leftover cake.
