Continue cooking just long enough to warm the honey.
NOTES: This is wonderful served with couscous. Use chicken broth when cooking the couscous. You can thicken the sauce with about 1/4 ts arrowroot, or some cornstarch.

Macadamia Crusted Drumsticks with Lemon Myrtle
Welcome Down Under and a taste of Australia with these Macadamia Crusted Chicken Drumsticks flavoured with thyme, lemon myrtle and Tasmanian pepper leaf.
Don't let the native herbs hold you back. I do prefer to buy them from local markets but they are available in my local grocery store as well.
They are flavours that I use often for everything from scrambled eggs to shortbread biscuits. I will leave flavour alternatives in the recipe for those without access to the herbs, but the end result does loose some of it's subtlety. If you have never tried them before, today can be the day you try something new!

1/4 tsp garlic powder
Crust
50 g crushed macadamia nuts OR macadamia meal
1/2 tsp lemon myrtle OR zest from 1/2 lemon
1 or 2 tbsp Dijon mustard
Add drumsticks, oil, herbs and garlic powder into a bowl and mix to coat.
Refrigerate for between 30 minutes to overnight.

Place the oiled drumsticks onto a lined baking sheet.
Using a pastry brush, paint the drumsticks with Dijon mustard.

FYI, I just made this without the marinade and it's still really good. Just salt and pepper the chicken and then fry it in Sesame oil. There was some difference but it was amazingly good.

There are only about 50 calories each and 1 breast makes about 4 wraps. Use romaine lettuce or hearts of romaine for your holders. Try it and let me know what you think.
