Classic French Pain Aux Raisin Recipe: a simple method step by step!
Flaky, buttery, soft yet crunchy on the outside! They are addictive!INGREDIENTS
For the dough
200g flour
5g salt
30g sugar
12g baking yeast
40g ghee
100ml milk
100g butter
For pastry cream
150ml milk
2 egg yolks
40g sugar
20g corn starch
1/2 tsp vanilla
For macerated grapes
100g light raisins
30ml rum
70ml of stewed syrup
For gilding
1 egg yolk
For syrup
30ml water
40g sugar
For croissant dough
METHOD
In a large bowl, mix by hand; flour, salt, sugar, yeast, butter and milk. After all the elements are turned on, knead the dough on a work surface. Let the dough rise. Smear the dough with a fist and spread it out with a roller so that a rectangle is 30 cm long and 15 cm wide. Cool the dough by placing it in the freezer for 20 minutes.
Prepare the butter: form an envelope with parchment paper (square side 15 cm), place the butter and distribute it so that the butter takes the shape of a square 15 cm side. Refrigerate for 10 minutes.
Gather your cold tempera, place the butter in the middle, fold it on the sides and spread the paste so that it is 60 cm long and 15 cm wide (provided that it is more or less 4 times longer). than wide) and do a double trick: fold the dough, as in the video. Turn this dough and turn it over so that it is 3 times longer than the width, and make a simple turn (here again see the video). Place this dough in the freezer for 20 minutes (the dough should be cold). Remove the dough from the refrigerator and lay it out for the last time so that it takes the shape of a 30 x 27 cm rectangle (remove the edges).
Apply to chilled pastry cream and macerated grapes (1 hour in warm syrup). Roll it all into a uniform pudding and cut into 3 cm slices. Lay the slices on a baking sheet and give to them. As soon as the bread with raisins has increased in size, grease with egg yolk .
Bake rolls at 170°C/340°F for 14 minutes. For syrup: heat sugar and water in a saucepan until boiling. Grease the raisin rolls with this syrup as soon as they leave the oven.

Pour 9 pains aux raisins
INGRÉDIENTS:
Pour la pâte à croissant :
– 200 g de farine (100 g de t45 et 100 g de t55)
– 4 g de sel
– 30 g de sucre
– 12 g de levure boulangère
– 40 g de beurre fondu (ou beurre noisette : encore meilleur)
– 95 ml de lait
– 100 g de beurre
Pour la crème pâtissière
– 150 ml de lait
– 2 jaunes d’oeuf
– 35 g de sucre
– 15 g de maÏzena
– 1/2 gousse de vanille
Pour les raisins macérés
– 100 g de raisins blonds
– 30 ml de rhum
– 65 ml de sirop à 30° baumé (35 g de sucre et 30 ml d’eau)
Pour la dorure
– 1 jaune d’œuf
– 20 ml de lait
Pour le sirop
– 30 ml d’eau
– 35 g de sucre
ÉTAPES:
Pour la pâte à croissant
Dans un grand bol, mélangez à la main ; la farine, le sel, le sucre, la levure (qui ne doit pas être en contact avec le sel et le sucre avant de commencer à mélanger), le beurre et le lait. Une fois tous les éléments incorporés, pétrissez la pâte sur le plan de travail durant une dizaine de minutes (ou au robot avec le crochet, vitesse moyenne et 10 minutes également), boulez la pâte (faites une boule) et placez la dans un bol pour une heure : pointage. Etape durant laquelle la pâte va doubler de volume. Dégazez la pâte avec votre poing et étalez la à l’aide d’un rouleau de sorte à avoir un rectangle de 30 cm de long pour 15 cm de large (très important de respecter les dimensions !!). Faites refroidir la pâte en la mettant 20 minutes au congélateur.
Préparez le beurre : formez une enveloppe avec du papier sulfurisé (carré de 15 cm de côté), placez y le beurre et étalez de manière à ce que le beurre prenne la forme d’un carré de 15 cm de côté. Placez au frigo pour 10 minutes.
Récupérez votre détrempe bien froide, placez au milieu le beurre, rabattez les côtés sur le beurre et étalez cette pâte afin qu’elle fasse 60 cm de long pour 15 cm de large (du moment qu’elle soit plus ou moins 4 fois plus longues que large) et faites un tour double : plier la pâte comme sur la vidéo. Tournez cette pâte d’ ¼ de tour et reétalez la pour qu’elle soit 3 fois plus longue que large et faites un tour simple (ici encore, référez-vous à la vidéo). Placez cette pâte au congélateur pour 20 minutes (il faut que la pâte soit bien froide). Sortez la pâte du frigo et étalez la une dernière fois pour qu’elle prenne la forme d’un rectangle de 30 X 27 cm (retirez les bords).
Etalez dessus la crème pâtissière refroidie ainsi que les raisins macérérés (1 heure dans le sirop tiède). Roulez le tout en un boudin uniforme et découpez des tranches de 3 cm d’épaisseurs. Placez les tranches sur une plaque de cuisson et laissez les « pousser » durant 2 heures si il fait 28°C (température idéale) dans la pièce (3 heures si il fait 23°C, presque 4 heure s’il fait 18°C), si la température de la pièce est supérieur à 28 °C, abandonner l’idée de faire des pains aux raisins, car la matière grasse va fondre et vos croissants seront ratés… Une fois que les pains aux raisins ont doublés de taille, déplacez les 3 minutes dans le frigo, afin qu’ils se raffermissent un peu et de ne pas les abimer en les badigeonnant de dorure.
Enfournez les pains aux raisins dans un four préchauffé à 170°C, placez un bol d’eau bouillant en bas du four, pour avoir une humidité idéale à la cuisson des viennoiseries. Cuisez les 14 minutes, retournez la plaque et cuisez encore 2 minutes. Pour le sirop : faites chauffer le sucre et l’eau dans une poêle, arrêtez le feu dès la première ébullition. Badigeonnez les pains aux raisins de ce sirop dès leur sortie du four. A dégustez tiède ???? Enjoy!
NOTES:
– Il est très important que la pâte à croissant reste froide tout au long des étapes de manipulation. Si la pâte se réchauffe, elle risque de s’abimer. Personnellement, je la mets 10 minutes au congel entre chaque étapes. C’est pour moi la clef de viennoiseries réussies.
– Si vous voulez des pains aux raisins pour le réveil de vos enfants : réalisez toutes les étapes de la recette jusqu’au façonnage déposez les sur une plaque cuisson, filmez au contact, mettez au frigo pour 12 heures (la veille), et passez à la cuisson le lendemain matin.
