Red Lentil Soup Recipe
Ingredients:
1/2 cup red lentil dal
1 cup water
1 cup broth of your choice
1/2 tsp cumin seed
1/4 tsp cayenne pepper
1/2 tsp garam masala
1/2 tsp turmeric
1/2 tsp salt
2 tsp oil, ghee, or butter
1 tsp grated ginger root
1/4 cup finely diced red onion
1/3 cup diced tomato
1/4 cup finely chopped cilantro
1/2 cup finely chopped broccoli or spinach
1 T fresh lemon juice
Directions:
Measure the red lentils into a medium size saucepan.
Rinse and drain the lentils a couple of times to wash off excess dust and dirt.
Add water and broth to your pot and place it on medium-high heat.
Add cumin seeds, cayenne pepper, garam masala, and turmeric.
Finish up with some salt and a pat of butter.
Once your soup is boiling add diced onion, tomato and fresh grated ginger root to the mix.
Let the soup boil for a couple of minutes, then cover the pot and lower the heat so things can simmer and thicken.
After ten minutes, take a peak and stir. You can add more water to thin your soup or leave it nice and thick.
Remove the pot from the heat and stir in cilantro, finely chopped broccoli and a squeeze of lemon.

Ingredients:
250g (1/2 lb) Red Lentils
150g (5 1/4 oz) Carrots
1 Brown Onion
1 Tomato
4-6 Garlic Cloves
1/2 Cup Vermicelli
3 Tbsp White Vinegar
1 1/2 Tbsp Olive Oil
1 1/2 Tsp Salt
1 1/2 Tsp Cumin
1/2 Tsp Black Pepper
1/4 Tsp Chilli

Directions:
1. Peel and slice your carrot into large chunks
2. Slice both your onion and tomato into quarters
3. Peel your garlic cloves, mince 2 of them and set aside
4. Add your chopped vegetables, the lentils and garlic (the whole ones not minced) to a large pot
5. Add 1.25 litres (quarts) of stock or water to the pot and1 teaspoon cumin, turn the heat up to high and boil the pot
6. When it boils, pull out your tomato quarters and remove their skin, then add them back to the pot
7. Turn the heat down to low and allow the soup to simmer for 45 minutes
8. When done simmering, the carrots should be cooked through, use an immersion blender to turn the soup into a smooth mixture. Be sure to blend all the vegetable pieces and it should be uniformly smooth.
9. In a small pot add 1/2 a tbsp of olive oil on medium high heat and add the minced garlic to it
10. Fry for about 30 seconds then add the remaining cumin
11. Fry for another 10-15 seconds then add the vinegar
12. Mix and fry for 15 more seconds and add it to the lentil soup
13. Mix in well then add salt, pepper and chilli powder (optional)
14. In a pot add the remaining olive oil and the vermicelli and fry on medium high heat until it turns a golden color
15. Add the fried vermicelli to the soup as well as about 1 cup of water, bring the pot to a boil once more and allow the vermicelli to cook for 10 minutes
16. When the time is up, your soup is ready, add more water if necessary to thin it out until it's a smooth liquid
17. Garnish with coriander, chilli and nigella seeds

Ingredients:
2 cups red lentils
2 large russet potatoes
1 carrot
1 onion
3 pieces garlic
1 tomato
7 cups water
3 tbsp olive oil
2 tsp cumin
2 tsp salt
lemon wedges to serve
few sprigs parsley
zaa’tar to taste
pepper to taste
Directions:
1. Rinse and drain the red lentils and set aside. Peel the russet potatoes and chop into small cubes.
2. Finely chop the carrot, onion, and garlic. Dice the tomato
3. Use a kettle and bring the 7 cups of water to boil
4. Heat up a stock pot to medium heat. Add the olive oil followed by the onions. Sauté for 3-4min
5. Add the carrots and sauté for 2min. Add the garlic and sauté for 1min
6. Add the cumin, salt, and pepper. Sauté for another minute. Then, add in the red lentils and tomato. Sauté for another minute
7. Add the potatoes and pour in the hot water. Give the pot a good stir
8. Bring the soup to a boil, then cover and cook on medium for 20min
9. Transfer 3-4 cups of the soup to a blender. Blend on medium low for a few seconds. Then, pour the soup back into the pot and give it a good stir to combine
10. Plate the soup and garnish with fresh lemon juice, chopped parsley, a drizzle of olive oil, a sprinkle of zaa’tar, and fresh cracked pepper to taste
