How To make Red Tomato Salsa
2 tb Vegetable oil
1 md Onion, thinly sliced
4 c Diced canned Italian plum
-tomatoes 1 c Tomato juice
2 ea Garlic cloves, peeled
4 lg Jalapeno chile, stemmed,
-seeded if desired 1 ts Salt
Heat the vegetable oil in a medium skillet over moderate heat. Cook the onions until soft, about 10 minutes. Transfer to a food processor fitted with the metal blade or a blender. Add the remaining ingredients and puree, in batches if you are using a blender, until smooth. Pass through a medium strainer, pressing with a spatula or wooden spoon to push through as much pulp as possible. Pour into a saucepan, and add the salt. Bring to a boil, reduce to a simmer and cook, uncovered, 20 minutes. Adjust the seasonings. Set aside and cool for table salsa or use warm for red rice or chilaquiles. 1 gallon salsa & Crispy Chips Recipe-
Salsa Roja and crispy corn chips secret recipe-
Ingredients
Boiled Salsa Roja (2:45)
Water for boiling (enough to cover tomatoes & chili)
3 Roma tomatoes
1 Jalapeño or serrano pepper
Small bunch of cilantro (20 stems)
1/2 tbsp salt (Himalayan salt)
Juice of half lime (1 tbsp)
-Adjust citrus and salt to taste after blending
Fresh Salsa Roja (5:07)
3 Roma tomatoes
1 Jalapeño or Serrano pepper (adjust depending on spice level of pepper)
Small bunch cilantro (10 stems)
1 tsp salt (Himalayan salt)
-Adjust citrus and salt to taste after blending
Roasted Salsa Roja (8:07)
3 Roma tomatoes+ 1 ripe vine tomato
1 Jalapeño or serrano pepper
Small bunch cilantro (20 stems)
1/2 Tbsp salt (Himalayan salt)
3 garlic cloves
1/4 medium onion
Juice of 1 lemon
-Adjust citrus and salt to taste after blending
-If you are using regular table salt use half suggested amount of salt
-if you have access to key limes you will have a better citrus flavor to your salsas
-salsa will last 5-7 days refrigerated in a tightly sealed container
-If you add onion to your salsa it will last 4 to 5 days in the refrigerator

LEARN HOW TO MAKE AN EASY ROASTED RED SALSA | THE PERFECT DIP!
LAY HO MA!! There's nothing better than a delicious recipe that is incredibly easy - and I mean EASY! Join me in this episode and learn how to make the most amazing roasted red salsa. This recipe has a delicious roasted tomato and jalapeno pepper flavour that is so simple and yet phenomenal. Let's begin.
Ingredients:
1/2 red onion
3 pieces garlic
2 green jalapeno peppers
3 red jalapeno peppers
3 roma tomatoes
generous pinch salt
1/4 cup cilantro (packed)
drizzle of olive oil
Directions:
1. Slice the red onion and place onto a baking sheet
2. Peel the garlic and place onto the baking sheet
3. Remove or keep the seeds in the Jalapeno peppers and place onto the baking sheet
4. Place the tomatoes onto the baking sheet and broil in the oven on low until the veggies start to blacken. Then, take it out of the oven and flip the veggies. Broil again on low until the other side of the veggies start to blacken
5. Transfer the veggies to a blender
6. Add the salt, cilantro, and a drizzle of olive oil
7. Pulse and blend on medium to medium low (keep a good amount of chunkiness!)
8. Plate and garnish with some more cilantro
