How To Make Collard Green Beef Burritos (STEP-BY-STEP) | LiveLeanTV
On today’s episode of Live Lean TV, I’m showing you how to make collard green beef burritos.
Cook Time: 10 minutes
Servings : 2
INGREDIENTS
► 4 collard green leaves (rinsed, dried, stems removed)
► 2 eggs (whisked)
► 1 cup ground beef (pre-cooked)
► 1/2 avocado (sliced into cubes)
► 1/8 red onion (chopped into fine pieces)
► 6 cherry tomatoes (chopped)
► 4 tbsp quinoa (cooked)
► 4 tbsp salsa
► 1 tsp yellow mustard
► dash salt
► dash Black Pepper
► coconut oil spray (or avocado oil spray)
INSTRUCTIONS
1. Spray a frying pan with a light coat of coconut oil spray over medium low heat.
2. Pour 2 whisked eggs into the frying pan and season with a dash of salt and black pepper.
3. Stir the eggs to scramble.
4. Once the eggs are mostly cooked, add 1 cup of pre-cooked ground beef and 1/8 of a chopped red onion to the frying pan and stir together with the egg mixture, then cook for 1-2 minutes.
5. De-stem 4 collard green leaves.
6. Once the egg mixture cools down a bit, spoon 1/4 of the mixture onto each collard green leaf.
7. Top the egg mixture with 1 tbsp of cooked quinoa, a few pieces of chopped cherry tomatoes, a few pieces of sliced avocado cubes, 1 tbsp of salsa, and 1 tsp of yellow mustard.
8. Roll up them up by folding down the top side, tuck in the sides, then roll it forward, as you press down to secure.
9. Enjoy.

1 medium tortilla
100g-120g sirloin
100g cabbage
50g onion
25g cream cheese
black pepper, 1/4tsp garlic powder
dash baking soda
4g oil
20g soy sauce
5-10g gochujang
1g cornstarch
5g honey
Start by slicing the beef into strips and then wash it in a bowl with cold water. Squeeze the water out of the beef, put it in a bowl and add in baking soda, and mix until combined.
Chop up onion and cabbage and add all sauce ingredients in a glass and mix until combined.
Add oil to a pan on medium heat and fry onions and cabbage for 3-5 minutes. Then make space, add another bit of oil, and add the beef strips. Fry the beef for 1 min and add garlic powder and black pepper. Flip and fry the beef for another minute. Keep mixing everything afterward for 30 seconds before adding the sauce with a splash of water if the sauce is too thick.
Spread cream cheese on the tortilla, add the beef mixture on top, and roll into a burrito shape. Place it back in the pan and cook all 4 sides for 30-45 seconds until browned all around. Done!

Easy Taco Bowl For meal preps or dinner! ????
Taco Bowl with Corn Salsa
(Makes 2-3 Portions)
1 Lb Lean ground beef
1 Tbsp Olive Oil
3 cloves Minced garlic
1/3 cup chopped yellow onion
Jasmine Rice
2-3 Fresh corn cobs
2 Small roasted jalapenos diced
1 red bell pepper diced
handful of chopped fresh chopped cilantro
½ cup black beans
Homemade Taco Seasoning:
- 1 Tbs Chili
- ¼ tsp Garlic Powder
- ¼ tsp Onion Powder
- ¼ tsp dried oregano
- ¼ tsp red pepper flakes
- ½ tsp Paprika
- 1 ½ tsp cumin
- 1 tsp each salt and pepper
First roast your corn cobs and jalapenos on a sheet pan in the oven for about 5 min or until becomes toasty! Set aside to cool. (Once cooled cut the corn kernels off the cobb)
In a skillet over med-high heat add the garlic and onions. Let these cook for about 1-2 min until they become fragrant. Now add your beef and taco seasoning. Mix this all together really well. Once cooked through remove from the heat and set aside.
In a bowl combine the corn, chopped jalapeno, diced bell pepper, cilantro, salt, pepper, and chili seasoning. Give this a good mix!
