this is how I make my copycat version of the beefy crunch burrito from Taco Bell.
Ingredients
-tortillas find tortilla recipe here You can do store bought tortillas or use the recipe posted above for the ones I used
Mexican RICE
-1 cup of white rice
-1 tablespoon of vegetable oil
-1/3 cup of tomato sauce
-21/2 cups of water
-1 teaspoon of clad de pollo
-1 teaspoon of clad de tomato
-1/2 teaspoon of salt
Instructions
-rise rice with cold water
-heat oil in pan throw rice in until toast for 3 min.
-add in tomato sauce water an seasonings, stir
-bring to a boil, put lid on
-turn heat on low for 20 min covered
-DO NOT REMOVE THE LID
-after 20 min. Turn off and leave lid on for 10 min
Remove lid and serve
Meat filling
-1 pound ground beef
-1 packet of Taco Bell taco seasoning (cook according to packet instructions)
-can of nacho cheese (I used rico gourmet nacho)
-bag of hot Fritos
- low fat sour cream
INTRUCTIONS
You can do store bought tortillas or use the recipe posted above for the ones I used
-layer your tortilla with sour cream, rice, meat mixture ,nacho cheese and the hot Fritos
-tuck sides in and roll your burrito (optional) if you want the grill marks cool it over your stove top till grill marks appear.

8oz 93% lean ground beef
2 slices reduced fat swiss
2 high protein tortillas
1/2 tsp Adobo
1/2 tsp salt
1/2 tsp olive oil
Chopped bell peppers
Lettuce
Tomatoes
Ketchup
Lite mayo
Chipotle mayo (2 servings) ⬇️ OPTIONAL
2 tbsp lite mayo
1/2 tbsp chipotle adobo sauce
1/4 tsp chipotle powder
1/4 tsp smoked paprika

Macros 1 serving: 372 calories, 23C, 16F, 33P
600g chicken thighs skinless boneless
6g smoked paprika
6g garlic powder
3g cayenne pepper
3g cumin
4g salt
black pepper
Mint sauce:
200g skyr
15g oil
10g mustard
10g vinegar
20g basil
10g mint
10g cilantro
salt, pepper
salsa:
1 onion
2 cloves garlic
100g tomato salsa
200g chicken stock
3g smoked paprika
1g chili powder
1g cayenne pepper
1g cumin
salt, pepper
6 tortillas 20cm or 9,5inch
140g shredded cheese
Directions:
Add chicken with the spices into a bowl and mix everything. Add a bit of oil into a baking dish and dump in the chicken and spread them. Bake the chicken at 200°C or 400°F for 15-18 minutes.
Combine all mint sauce ingredients in a blender and mix it for 20 seconds. Transfer the sauce to a squeeze bottle.
Add oil into a pan on medium heat and add in the onions. Fry them for 3 minutes. Add in more oil crush in garlic, and keep frying for 15 more seconds. Now add in spices and toast them for 30 seconds. Add in stock, salsa, salt, and pepper and mix. Let it simmer for 8-10 minutes on low heat.
Now prepare the 6 tortillas and fill them with chicken, 10-15g of mint sauce, and 15g of cheese each. Roll them up. Add to a baking dish half of the salsa, spread all 6 tortillas in, and add the other half of the salsa and 50g of cheese. Bake this for 3-4 minutes at 200°C or 400°F just until the cheese is melted. Done!

Meal Prep Chipotle Style Burritos
Watch how easy it is to make bulk chipotle style burritos to freeze for later. Make 16 healthy burritos. Skip the tortilla and makes these into bowls.
Make your own taco seasoning:
To reheat the burrito, wrap them in a damp paper towel and microwave on medium for 5 minutes.
Ingredients:
3lbs Ground Beef $8.63
1 Lime $0.11
2 Cups white rice $.50
Salsa Jar $4.95
16 Tortillas $3.49
2 Cans Black Beans $1.69
1 Large Yellow Onion $0.99
Bunch of Cilantro $.79
3 Green Peppers $1.99
2 cups shredded cheese $.99
Homemade Taco Seasoning $.25
Total $23.25/16 Burritos $1.45 Each
Brown Beef and drain. Add Seasoning with cup of water.
Boil water for rice with oil and salt. Add rice and lower heat.
Simmer beans in sauce pan.
Saute onion and peppers.
Shred cheese.
Assemble and enjoy. These freeze great!

1tsp cornflour
150g cherry toms
1 red onion
.5 Iceberg lettuce
.5 lemon
.5 Iceberg lettuce
2 corn wraps
Coriander to garnish
Method
Cook the beef in a hot pan with a splash of oil until browned.
Reduce the heat to medium and add the spices, cook out for 2 minutes.
Add the cornflour and 300ml water.
Cook until the sauce thickens and coats the mince.
Chop the cherry tomatoes and the red onion and dress with the lemon juice.
Chop the lettuce.
Toast the wraps in a hot pan.
