How To make Rice Pilaf with Peas
2 c Rice
3 tb Olive oil
1 ea Onion, chopped
2 ea Bay leaves
1 sm Piece cinnamon
1 ts Salt
1 pn Freshly ground black pepper
1 c Peas
4 c Water or stock
1 tb Parsley, chopped
Tomato slices Cucumber slices Wash rice & leave to soak for half an hour. Allow to drain. Heat oil in a pot & fry onion till it becomes translucent. Add bay leaves, cinnamon, salt, pepper & rice. Cook until the rice grains become opaque, stirring occasionally. Add peas & stir together until the peas are well coated in oil. Add 4 c water or stock. Bring to a boil, cover & simmer over a low heat until the rice is tender (15 to 20 minutes). Serve with the garnish. Jack Santa Maria, "Greek Vegetarian Cookery"

Serves 4-5
2 cup long-grain basmati rice
1 tsp cumin seeds
2 cinnamon sticks
2 bay leaves
6-7 black peppercorns
5 cloves
3 1/2 cup warm water
2 tbsp ghee/vegetable oil
1/2 fresh lemon juice
salt to taste
Cooking Instructions
Heat up a wide pan and add ghee or vegetable oil on a medium flame.
Add cumin seeds and when pop, add rest of the spices, fry them for 1 minute until they get aromatic.
Add thinly sliced onions and brown them.
Add thawed green peas or fresh peas. Optionally you can add chopped vegetables of your choice. Cook them for 2-3 minutes.
Drain the rice and add into the pan and toast for 2 minutes.
Pour in water and let boil.
Now add salt and lemon juice and stir.
Cover with a lid and put the flame down to the lowest setting. Cook for 10 minutes.
Switch the flame off and let the pan sit for another 7-8 minutes covered.
Now your pilau rice should be ready. Enjoy!!

Ingredients:
2 tsp olive oil
½ diced onion
1 cup long-grain rice, uncooked
½ tsp garlic salt*
½ tsp dried basil leaves
½ tsp ground turmeric
2 cups chicken broth
1 cup frozen peas and carrots
Instructions:
Heat the oil in a skillet and add the onion. Cook for 3 minutes or until it’s almost translucent.
Add in your rice and cook, stirring until the rice is lightly toasted.
Add in your spices and stir until evenly distributed.
Add your chicken broth and bring to a boil.
Lower the heat to a simmer. Cover and cook for 10 minutes.
Add in the frozen peas and carrots and stir well (adding up to ½ cup of extra broth if the rice looks too dry– you don’t want it to burn). Cover and cook for an additional 10 minutes.
*Make your own garlic salt by combining 3 teaspoons of salt to 1 teaspoon of garlic.

Serves 3-4
Prep Time: 5 min
Cook Time: 30 min
Ingredients:
2 Tbsp Cooking Oil
1 Tbsp Minced Garlic
1 Small Onion (Diced) - 1/2 cup
1 Tomato (Diced)
2 Cups Rice - Any kind of rice will work (Make sure to follow the appropriate cooking instructions)
4 Cups Liquid - Chicken stock or Water (Or a combination of both - The more chicken stock the more flavorful your Pilaf will turn out)
Seasoning - Any of your favorite spices (Chilli Powder, Paprika, Black Pepper, etc) and Salt (Be careful when adding salt as Stock is already salty) Always taste the liquid before adding the seasoning.
Cilantro, Mint or Parsley for Garnish
Additional Tips: Before adding the rice to the pot add any vegetables of your choice and sauté to make Vegetable Rice Pilaf
