Dandelion-Rosemary-Turmeric-Ginger Soda | Herbal Beer
Today we are making a naturally fermented drink from Dandelion, Rosemary, Turmeric, and ginger. This inspirational recipe is based on my belief that Rosemary has health benefits for your mood and brain health. Studies have shown that the antioxidants in Rosemary, such as the carnosic and rosmarinic acids, are highly effective in combatting cancer and Alzheimer’s disease.
Dandelion flowers, which are rich in flavonoids and polyphenols are known for their skin healing, pain relieving, anti-inflammatory, anti-oxidant, and anti-tumor properties. Dandelion is a rich source of vitamins A, B complex, C, and D, as well as minerals such as iron, potassium, and zinc.

Ingredients for 8-9 liters
• 3 cups dandelion petals (only the yellow part) Rinse well
• 1/3 cup fresh or dried rosemary
• 1 cup chopped fresh ginger roots
• Turmeric with Black Pepper
• 8.5 liters (36) cups water
• 3/4 cup sugar (this is for your bug, not for you)
• 1 tsp sea salt (option)
• 1 cup ginger bug starter
• 2-3 Lemon’s juice (use peel in the tea)
• Sweetener you prefer, I use stevia powder (1/2 tsp), adjust for your personal taste
Note: For the herbal: add more or less depending on the strength of the tea you prefer
Instructions
1. Make herbal tea by boiling water, add sugar and all herb, stir.
2. Turn off the heat, cover, and allow the tea to steep overnight. (cool completely)
3. The next day, add ginger bug starter and lemon juice. Stir.
4. Strain the mixture, and squeeze out all the liquid.
5. Add sweetener (adjust for your personal taste)
6. Fill up your bottles 2/3 full to allow room for gas expansion.
7. Let them sit at room temperature to carbonate for 1-2 days until it reaches your fizzy level. The longer you let it ferment the more sugar will eat up by the ginger bug.
8. Burp before transferring to the fridge to slow fermentation. They will keep in the fridge up to 1 month. Serve chilled. Enjoy!!!
* Temperature here around 70 f or 21 c
A cooler room will slow fermentation while a warmer room will speed it up.
**Research supports that combining the piperine in black pepper with the curcumin in turmeric enhance curcumin absorption by up to 2,000%

Get the fresh feel of fall with our September Cocktail of the Month, Rosemary’s Pear.
2 oz @BloomGin
1 ¾ oz organic pear nectar
1 oz rosemary syrup*
2 ¼ oz @Stoli Ginger Beer
Rosemary sprig
Combine first three ingredients in a shaker. Shake and strain into a glass filled with fresh ice. Top with ginger beer and garnish with a rosemary sprig.
*Rosemary Syrup: Combine equal parts sugar with boiling water, stir until dissolved. Add rosemary leaves, steep for about 30 minutes. Strain out rosemary leaves and let cool.
