Making food for backpacking - Beef Stroganoff
So today I want to make some dry food for camping/hiking using my harvest right freeze-dyer. However, in the process, I am going to be making some beef stroganoff which turned out to be ideal for freeze-drying.
This was inspired after talking to a friend of mine who goes hiking with his family. When camping on the first night he really likes to have some of the prepackaged freeze dryer food you get from rei or Costco. The problem with this stuff, other than the coast, is the fact that there is a high level of salt in the dish, which is perfectly great when you are actively hiking, but when he is just camping with his family, it’s quite high for his children.

2 medium onions
16 Oz 450 g of Mushrooms
1 lb or 500 g of Sirlioin steak
2 tablespoons of butter
1/4 cup or 35 g of flour
6 cups or 1.5L of Beef Broth
1.5 cups or 250 g of Sour Cream
12 oz package (350 g) of uncooked egg noodles

Today we’re making a low carb keto version of a classic family favorite, beef stroganoff.
We’ll replace the traditional pasta noodles with sliced mushrooms. Mushrooms contain vitamin D and selenium, they to promote a healthy heart and help prevent cancer. We’re also using yellow onions, full of vitamins C and B6, and lifesaving antioxidants. The ground beef, pork, cream cheese and sour cream are low in carbohydrates and high in fat which is perfect for the keto diet. One serving of this delicious dish is only five net carbs.
Tonight’s is another one of our quick and easy 20-minute meals recipes. We’re making low carb keto friendly beef stroganoff. We’ll replace the traditional pasta noodles with heart healthy sliced mushrooms. This recipe is rich & creamy and full of flavor.
Our mise en place of tonight’s dish
1 Pound of Ground Chuck
8 Oz of Sliced Mushrooms
4 Oz Each of Cream Cheese and Sour Cream
½ Yellow Onion Chopped
½ Teaspoon Each of Onion Powder, Garlic Powder, Turmeric, Salt, Pepper, Paprika, and Italian Herbs
2 Cloves of Chopped Garlic
2 Oz Each of Freshly Grated Parmesan Reggiano and Aged White Cheddar Cheese
4 Tablespoons of Extra Virgin Olive Oil
2 Oz of Lemon Juice
In a large pan or wok, pour in 2 tablespoons of the olive oil and turn the heat to medium low. Add in the chopped onions and sliced mushrooms. Stir everything together so that the onions and mushrooms are coated with the olive oil, and sauté then for about 10 minutes.
Add in a few more tablespoons of olive oil and then add in the minced garlic. Sauté the garlic for about a minute; remember that garlic burns easily, so you only need to cook it for a minute. As soon as it gets fragrant, you’ll know it is done cooking. Pour the onions, mushrooms, and garlic into a bowl and set it aside.
Now add in the ground beef and cook the meat until it is browned mixing thoroughly. This should take about six to seven minutes. Add in the spices and mix them into the meat thoroughly too. Once the meat is cooked, add it to the bowl with the mushrooms and onions.
Next, we’ll make our stroganoff sauce. Add the cream cheese and the sour cream to the pan and stir it up until it’s melted. Add in the lemon juice and stir everything together.
Add the bowl of meat, mushrooms, and onions back into the pan. Add in the shredded cheeses and stir it together. Check for seasoning and taste; we’ll add a bit more paprika and fresh ground pepper to ours, and we’re done!
And there it is! One pan low carb keto beef stroganoff, a quick and easy 20-minute meals recipe. with mushrooms, onions, ground chuck, seasonings, cream cheese, sour cream, and lemon juice. This dish is a great way to fill you up for dinner with plenty left over for lunch tomorrow. Satisfying and full of flavor, this recipe is only five net carbs per serving, perfect for the keto diet.
