Beef Stroganoff or beef Stroganov (бефстроганов) is a traditional Russian recipe made with sautéed beef then topped with smetana (sour cream).

Ingredients
❒ 1 lb beef top sirloin or beef tenderloin (whole), at room temperature
❒ 3 medium onions cut into thin strips
❒ 7 oz. smetana
❒ 4 tablespoons butter
❒ 4 tablespoons sunflower oil
❒ 2 teaspoons flour
❒ 1 teaspoon tomato paste
❒ 1 teaspoon mustard
❒ 1 teaspoon paprika
❒ ½ cup boiling water
❒ 3 tablespoons chopped parsley
❒ Salt
❒ Black pepper (freshly ground)
Equipment
❒ Dutch oven
❒ Mallet
❒ Parchment paper
Instructions
❒ Wash the meat, and pat dry it well with paper towels.
❒ Without cutting the beef, place it between two sheets of parchment paper and beat it lightly with a mallet.
❒ Cut the meat against the grain into thin slices about ¼ inch (5 mm) thick and then cut it into very thin strips.
❒ In a Dutch oven, heat 3 tablespoons of butter and 2 tablespoons of sunflower oil over medium heat and add the onion strips.
❒ Season with salt and pepper and sauté over low heat until golden brown, stirring regularly.
❒ Sprinkle the fried onion with sieved flour and mix.
❒ Add the smetana, mustard, paprika, and tomato paste and mix well.
❒ Add the boiling water and bring to a boil while mixing.
❒ Cook for 5 minutes over low heat, stirring occasionally.
❒ Heat a dry pan on high heat, add the remaining oil and butter.
❒ Fry the meat over high heat in small portions, so that the meat sits on the surface of the pan in a single layer. The goal is to sear the meat to immediately get a crust so that all of its juice stays inside. Putting too much meat at the same time will generate too much juice.
❒ Salt, at this stage, is prohibited because the salt causes the release of meat juices.
❒ Fry the meat for 2 to 3 minutes, turning it over, until it is crusted.
❒ Transfer the fried meat to the creamy onion sauce.
❒ Stir well and simmer for another 2 minutes over low heat or until the meat is tender.
❒ Finish by seasoning with salt and pepper.
❒ Serve with mashed potatoes, boiled potatoes, shoestring potatoes, or rice.
❒ Just before serving, sprinkle with chopped parsley.

Beef Stroganoff
Beef Stroganoff is a Russian dish of sautéed pieces of beef served in beef broth and thick coconut cream. From its origins in mid-19th-century Russia, it has become popular around the world, with considerable variation from the original recipe.
Ingredients
Butter- 1 tbs
Beef- 500 gram
Butter- 1 tbs
Onion- 2 medium size chopped
Garlic- 2 nos chopped
Mushroom - 10 sliced
Salt- 1-2 tsp
Ground mustard seeds- 1/2 tsp
Black pepper powder- 1/2 tsp
Garam masala- 1/2 tsp (optional)
Saute for- 5 min
All purpose flour- 3/4 tsp
Beef Broth- 1 cup
Simmer it for another 5 min
Fresh coconut cream/milk- 3/4 cup
Add the fried Beef
Simmer for another 2 min
Turn off the flame
Curry leaf-optional
Better serve with Pasta/ Palappam.

Onion - 3 piece
Mushrooms - 250 gramm
Cucumber pickles - 170 gramm (Namakin brand)
Plane flour
Cooking cream - 700 gramm
Sour cream - 2 table spoon
Tomato paste - 1.5 tea spoon
Butter
Olive oil
Salt and black pepper.

A recipe for authentic beef stroganoff:
Ingredients:
1.1 pounds (500 g) beef tenderloin
1 onion
7 ounces (200 g) mushrooms
2 garlic cloves
2 tablespoons of butter
2 tablespoons vegetable oil
1 cup beef broth
1 cup sour cream
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
Salt and pepper to taste
Fresh parsley
Instructions:
Chop the parsley finely.
Chop the onions into feathers.
Chop the mushrooms randomly.
Slice the beef thinly.
In a large skillet, heat butter and vegetable oil over medium-high heat.
Add the sliced beef and cook until browned.
Remove the beef from the skillet and set aside.
In the same skillet, add the sliced onions and sliced mushrooms. Cook until the onions are translucent and the mushrooms are browned.
Add the minced garlic and cook for another minute.
Pour in the beef broth, Dijon mustard and Worcestershire sauce. Stir well.
Bring the mixture to a boil and simmer for 5 minutes to allow the flavors to combine.
Reduce heat to low and add the sour cream.
Season with salt and pepper to taste. Cook for another 2 to 3 minutes until the sauce is heated through.
Return the browned beef to the skillet and stir to coat evenly with the sauce.
Cook for another 2-3 minutes to reheat the beef.
Serve the beef stroganoff with rice. Sprinkle with fresh chopped parsley for freshness and flavor.

• beef – 700 g
• mushrooms – 250 g
• bulb onion – 220 g
• beef broth – 250 ml
• mustard – 1 tsp
• butter – 30 g
• vegetable oil – 3 tbsp
• bay leaf – 1
• 20% sour cream – 250 g
• black pepper – to taste
• salt – to taste
• parsley – 2 sprigs

1. Cut the onion into strips, mushrooms into slices, beef into not big bars.
2. Heat the pan with vegetable oil, put one layer of the meat on it and fry over high heat for 3-5 minutes, keep flipping over not to burn. Fry the whole meat this way.
3. Take out the fried meat into the bowl.
4. Add the onion to the pan and fry over medium heat for 4 minutes.
5. Add the mushrooms and fry for 7 minutes over low heat.
6. Pour in the broth, add salt, pepper, mustard and bay leaf and stew for 3 minutes over low heat.
7. Lay the fried meat back to the pan and stir.
8. Add the sour cream, parsley, stir and take off the pan from the stove.
9. Serve the beef stroganoff with mashed potatoes, vegetables, rice or pasta.

Beef Steak - 500gm
Butter - Around 150gm
All-purpose flour - 45gm
Chopped Onion - 1 Big size
Sour Cream - 200gm
Salt - To Taste
Black Pepper - 1/4 Tsp
Paprika - 1/4 Tsp
Mustard - 1/2 Tsp
Beef Broth - 1 Cup
|Method|
1) Cut the steak in strips. Put a frying pan on low/medium heat. Add in 1 & 1/2 Tbsp butter and fry your beef strips from both sides, until done. Put them aside. Save the juices for sauce.
2) Grab another pan, put in the beef sauce we saved, add 3 Tbsp Butter, let it melt. Then add chopped onion and flour. Mix it well
3) Add Sour Cream. Mix it. Then let it simmer for a few minutes.
4) Add your beef strips. Give it a stir. Add 2 TBSP butter, Salt, Black Pepper, Paprika, and Mustard. Mix it well so all the flavor can be absorbed by the meat. Let is simmer.
5) Optional: You can add Beef broth if your sauce is too thick. After adding beef broth, wait for the water to evaporate, let it simmer for few minutes and your Beef Stroganoff is ready to serve.
6) Serve it over mashed potatoes because that is how Russians like it.
