CHILE CON QUESO: How to Make the Best Chile Con Queso with Hatch Green Chile/Delicious Easy Recipe
Whether you call it Chile con Queso or Queso Dip, you're going to love this easy recipe. It's made with Hatch green chile and it's absolutely delicious. Serve it as an appetizer with tortilla chips or pour it over grilled chicken, nachos, or in your tacos. The possibilities are limitless. Read on for the recipe.
Chile Con Queso
1/2 cup chopped Hatch chile (roasted & peeled)
4 cups grated cheese of your choice
1 roma tomato, chopped
1/2 medium onion, chopped
1 garlic clove, minced
2 Tbsp. butter
1 5oz. can evaporated milk
salt to taste (I use 3/4 tsp.)
1/4 tsp. pepper
1/2 tsp. oregano
Heat skillet on stove over medium-high heat and melt butter in it. Add onions and sauté until translucent. Add minced garlic, chopped tomato, green chile, and all seasonings. Stir and let cook down for a few minutes. Pour in evaporated milk, and add grated cheese. Stir until cheese is fully melted. Serve hot and enjoy!

Sometimes this is called a “queso flameado” but queso flameado is usually lit on fire with a shot of tequila - we’re not doing that today. We’re making a simple choriqueso the way we used to experience it here in
South Texas on the border. Sometimes this is made with rajas, sometimes with mushrooms or other chile pepper and onion toppings, but today we’re keeping it simple.
A lot of my barbecue passion and experience came from my father and grandfather, but the choriqueso and cabrito experience came from my father in law – Frank Nieto!
Today we’re cooking over the fire on the ProPit RPG Grill but you can cook this on the stove top or in the oven, whatever works best for you. All you need for this recipe is two packages of Chorizo de San Manuel, our favorite chorizo, and two packs of queso oaxaca.
This recipe is so, so easy to make. All we have to do is cook the chorizo in the pan, add the grated cheese, and then pull yourself a big ol delicious choriqueso taco. You can top this with your favorite salsa, guacamole, or anything else you like. Let’s fire it up and cook some choriqueso!

Ok, so this Queso Blanco Dip is seriously amazing! Only 3 ingredients, simple and delicious. You must try this recipe because I guarantee you will love it. And you will be the hit at any party!
Queso Blanco Dip
1 pound of White American
1 4oz can of green chilies
1/2 cup of milk (I use the can to measure the milk)
Place all ingredients in a pot and stir frequently until melted. If you want the dip thinner add more milk, if you want the dip thicker add less. It does set up as it cools so if it seems thin just let it cool a little and it might be the consistency you like.

1lb lean ground beef
4-6oz Chorizo
8 oz pepperjack cheese
1 diced onion
1 can Fire Roasted Rotel
fresh lime juice
1 packet sazon
McCormick Hamburger Seasoning
1 tbsp Garlic Paste
2 oz beer or chicken/beef stock (to deglaze the skillet)
8-16 oz of Velveeta (depending on how large or a portion you're making - use 1 lb to stretch the recipe further and adjust seasoning as needed)
Directions:
Prep veggies and shred cheese. Heat skillet and add a bit of oil - cook ground beef until no longer pink. Add in chorizo and cook - stirring to combine. Season with hamburger seasoning and sazon. (The chorizo has tons of flavor in the sausage already so taste and adjust as needed, every brand is a bit different). Add a squeeze of fresh lime juice and garlic to the meat and then add in onion and jalapeno. Cook on medium low heat until the onion begins to get tender. Deglaze the skillet with beer or stock and bring to a boil to reduce. Turn heat to low and start to add in the velveeta cheese and cook on low until it melts. Add rotel and mix to combine. Next add in your pepperjack cheese and cook until smooth and well combined. Taste and adjust the seasoning to your preference. If the sauce is too thick you can thin it with some milk or chicken stock (or BEER lol).
