How To make Sand Tarts (Real Old German Style)
2 1/2 c Sugar
2 c Butter
2 Egg, well beaten
1 Egg white
4 c Flour
Pecans Cinnamon Cream the butter and sugar together. Slowly add the flour, working it in well. Add the well-beaten eggs and mix thoroughly. Chill over night. Roll out thin on lightly floured board; brush cookies with the egg white which has been slightly beaten, sprinkle with sugar and a little cinnamon and press 1/2 pecan into center of cookie. Bake at 350-F about 10 minutes.

2 cups powdered sugar for tossing (not sifted)

Recipe: Lime Pie without Sweetened Condensed Milk
This lime pie is refreshing and perfect for the hot summer months.
Key Lime Pie:
For graham cracker crust:
About 8-12 graham crackers or 15-20 small butter cookies
1/4 cup (60g) melted butter
For filling:
4 eggs
1 cup (200g) sugar
3/4 cup (170mL) freshly squeezed lime juice (about 5 regular limes or 15 key limes)
1/2 cup (125g) butter
2 tsp plain gelatin bloomed in 2 tbsp of water for about 5 minutes (if you don't want to use gelatin, you can substitute agar agar or 2 tbsp cornstarch)
1/2 tbsp lime zest
Crumble graham crackers or butter cookies into crumbs. Add melted butter and mix until mixture resembles wet sand. Press it into your pie form and bake at 350°F or 180°C for 8-10 minutes. Allow to cool before using.
Combine lime juice, sugar and eggs (and corn starch if using that) in a heat proof bowl (glass or metal) and heat it over a double boiler stirring frequently with a whisk until mixture is hot to the touch. Add butter about a tablespoon at a time and whisk until completely incorporated before adding the next bit until all the butter is incorporated. Remove mixture from heat. Add lime zest and gelatin or agar agar and whisk until completely combined. Pour mixture into your cooled graham cracker crust and allow to set in the fridge for at least 2 hours. Overnight is better. Serve cold alone or with whipped cream.

I’m sharing the family recipe for PA Dutch Sandtarts cookies…
1 C butter
2 C Sugar
3 eggs
4 cups Flour
Roll thin cut with round biscuit cutter and brush with egg whites and dust with Cinnamon Sugar mixture (1/2 C Sugar + 2 Tsp Cinnamon)
Bake at 350 for 8-10 minutes

Lebanon PA, 3.8.2021: PA Dutch Molasses Cookies
IGREDIENTS:
• 2 cups flour
• 2 teaspoons baking soda
• 1 cup sugar
• ¾ - 1 cup oil
• 1 egg
• ¼ cup Molasses (Brer Rabbit mild is what I use.)
• ½ teaspoon salt
• 1 teaspoon cinnamon
• ½ - 1 teaspoon ginger
• ¼ teaspoon cloves
• Pam cooking spray
DIRECTIONS:
• Place ingredients into a mixing bowl.
• Mix well with a whisk, wooden spoon, mixer or spatula.
• Mixture will be thick. If too thin, refrigerate for 2 hours
• Roll mixture into 1” balls.
• Coat each ball with sugar, and place 2” apart on a greased cookie sheet.
• Bake at 375 degrees for 8-10 minutes.
• Yields 2 dozen cookies.
