See part 1 for ingredients Recipe by: CHRISTMAS COOKBOOK Mix granulated sugar, shortening, milk, lemon peel and egg. Stir in flour, baking powder, baking soda and salt. Heat oven to 400 degrees. Shape dough into 1-1/4" balls. Place about 2" apart on ungreased cookie sheet; flatten each to about 2-1/2" diameter with greased bottom of glass dipped in sugar. Bake until edges are light brown, 8-10 minutes; cool. Spread cookie with small amount of Creamy Frosting ( mix all frosting ingredients to desired consistency) Press on miniature marshmallow for tassel of cap. Sprinkle top third of cookie with red sugar. Press 2 currants for eyes and red cinnamon candy for nose into center third. Sprinkle bottom third with coconut for beard. Frost and decorate each cookie before starting another. (About 1-1/2 dozen cookies). For Santa Claus Cookie Pops: After shaping dough into balls, insert wooden ice-cream sticks halfway into balls; continue as directed. -----

For the cookie:
2 cups AP flour
1/3 cup of cocoa powder
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 stick room temp butter
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla extract
1 tsp red food color
For rolling:
1/4 cup white sugar
1/2 cup powdered sugar
Baking time: 8-10 mins. at 175 deg cel. But still, you should keep checking your cookies(not opening the oven) because sometimes it varies especially when using an Electrical oven.
PREHEATING THE OVEN BEFORE YOU BAKE IS IMPORTANT!!!!

Ingredients:
½ cup vegan butter
1 cup sugar
1 ½ teaspoons Ener-G egg replacer + 2 tablespoons water
2 teaspoon baking powder
½ teaspoon salt
½ teaspoon vanilla extract
2 cups flour
Directions:
Preheat 375 degrees F.
In a large mixing bowl, cream together vegan butter and sugar.
Mix in egg replacer mixture (EnerG egg replacer power mixed with water) and vanilla extract.
In a separate bowl, sift together flour, baking powder, and salt.
Stir flour mixture in with the other ingredients.
Roll out dough onto parchment paper. Use cookie cut outs or your imagination to cut your cookie shapes.
Place on a baking sheet. Bake for 10 minutes and immediately move to cooling rack.
Enjoy your vegan sugar cookies.

The trick is royal icing, a silky-smooth combination of egg whites, vanilla, and confectioner’s sugar that dries to a hard matte finish. It can be dyed any colour, and the possibilities are endless.
As a cookie decorating artist, I feel extreme joy and satisfaction every time I complete a new set of cookie design.
