How To make Shrimp Quesadillas
4 Flour tortillas
1 c Shredded Monterey Jack
-cheese (4 oz) 1/2 c Coarsely chopped cooked
-shrimp or imitation shrimp 1/4 c Thinly sliced green onions
-and tops 1 tb Finely chopped cilantro or
-parsley Sprinkle half of each tortilla with cheese, shrimp, onions, and cilantro. Fold tortillas into halves. Pack in freezer bags and freeze. TO COOK: Thaw at room temperature 10-15 minutes. Cook in lightly greased skillet over medium heat until golden on both sides. Cut each tortilla into 4 wedges. Serves 4.

INGREDIENTS:
2 Wheat or Flour Tortillas
Medium Shrimp Approx. 7 oz. / 200 Grams
Pinch of Sugar - Optional
½ Tsp Garlic Powder
½ Tsp Kashmiri Chili Powder/ Paprika
1 Tbsp. Oil
1 Tbsp. Jalapeno – Finely Chopped
2 Tbsp. Green Bell Pepper - Finely Chopped
2 Tbsp. Greens of Spring Onions- Finely Chopped
2 Tbsp. Whites of Spring Onions- Finely Chopped
70 Grams of Grated Mozzarella and Pepper Jack Cheese
Salt &Pepper to taste

Hola and Happy Cinco de Mayo my Friends, welcome to my Southern Kitchen!
Today I am making a classic Mexican dish, Quesadillas but with a twist; Shrimp Quesadillas!!! Bursting with flavor and full of gooey cheese and tender Shrimp; perfect for Cinco de Mayo and makes a great weeknight meal anytime of the week!!!

1 pound uncooked jumbo or medium shrimp, rinsed, peeled and deveined (is using jumbo, cut into halves or fourths)
1 tablespoon extra virgin olive oil
1/2 yellow or white onion, diced or chopped
1/2 red bell pepper, diced or chopped (or any color)
1 small fresh jalapeño pepper, diced and seeds removed
2 garlic cloves, minced
2 tablespoons taco seasoning
1 to 2 cups shredded cheese (sharp cheddar, Mexican blend, Monterey Jack, mozzarella, or Quesadilla)
6 to 8 medium size flour tortillas
In a large pan or skillet over medium heat, add in the olive oil and bring to temperature. Add in the chopped onion bell pepper, jalapeño, and garlic; cook for 5 minutes until translucent. Next add in the shrimp and taco seasoning and cook for about 5 minutes or until the shrimp turn pink. Transfer the shrimp mixture to a plate or bowl then rinse and wipe down the pan with a paper towel. Return the pan to the heat and spray with cooking spray or brush with about 1 teaspoon canola or vegetable oil. Place a tortilla in the pan and sprinkle the cheese on one side of the tortilla; spoon about 5 to 6 shrimp or enough to cover then add on another sprinkle of cheese. Fold the tortilla in half and cook for about 2 to 3 minutes on each side or until golden brown and crispy. Repeat for reaming tortillas. Place the Quesadillas onto a serving plate, serve with sour cream, salsa, or guacamole (if desired) and enjoy!

Happy Monday everyone! No really I am about to make it really happy with a fun and simple recipe lol. We are making some Firecracker Shrimp Quesadillas. OMG these things are so good, as soon as I was done filming my 14 year old jumped on these and started in haling them lol. These are a great Weekend lunch, maybe a mix it up dinner or heck a chilling around the house late night snack. It really doesn't matter when you decide you want these you will totally fall in love with them!
