Stuffed Portobello Mushrooms

Ingredients
3 Portobello Mushrooms – Cleaned – gills scrapped off and Top of mushrooms wiped
15 medium sized shrimp ( 4-5 Shrimp for each mushroom )
1 ½ Tbls of Butter / olive oil
2Tbls minced garlic
1 Tbls. freshly chopped parsley
1 Handful of roughly chopped spinach
¾ Cup chopped Brie Cheese – ( white outer layer off – Brie cheese chopped into small square )
Pinch of Salt and Black pepper
*optional ¼ grated parmesan cheese
The more cheese the better!
Directions: Preheat oven to 375 F
1. Melt the butter on medium low on a pan.
2. Add the minced garlic, salute for approximately 1 min ( careful to not let the garlic burn)
3. Add the shrimp- cook until both sides are pink ( over cooked shrimp will curl up )
Add pinch of salt and black pepper
4. Add the parsley
5. Turn of the heat once the shrimp is cooked
6. Brush your Portobello mushrooms all over top sides and inside with the garlic, butter and parsley mixture
7. Stuff your mushroom with shrimp, add some of the chopped spinach, brie cheese, parmesan cheese.
8. Place the mushrooms on a baking sheet and put into your oven for approximately 15 min approximately

How to Make the Best Shrimp Stuffed Mushrooms - A One Bite Appetizer
Filled to the brim with flavor, my Shrimp Stuffed Mushrooms combine shrimp, bacon, scallions and mushrooms for a new take on the classic stuffed mushrooms. These one bite wonders are so good you'll want to make a double batch as their won't be any leftovers.

Preheat oven to 375 F (190 C)
12 large Cremini mushrooms
Clean mushrooms as needed and remove the stems.
Season both sides of the caps with salt and pepper. Place mushroom caps on sheet pan with a rack, gill side down. Brush the caps with olive oil. Roast for 15 minutes. Remove from oven, allow to cool.
Shrimp filling:
3/4 pound (340 g) shrimp, cleaned and shelled
1 thick slice bacon (50 g), cut into lardons
1 slice firm white sandwich bread
1/4 cup (60 ml) milk
4 scallions, chopped
2 tablespoons (6 g) chopped cilantro
2 teaspoons (6 g) cornstarch
1/2 teaspoon (3 g) sugar
3/4 teaspoon (6 g) salt
Large pinch of black pepper
3 tablespoons (45 ml) vegetable oil
1 oz. (25 g) grated Parmesan
In a shallow bowl, combine the bread and milk to moisten the bread. Once bread is moist, squeeze excess milk from the break, discard any leftover milk and set bread aside.
In a food processor, pulse the bacon until finely chopped. Add shrimp, and pulse two or three times to combine.
Next, combine all the rest of the bread, scallions, cilantro, cornstarch, sugar, salt & pepper. Pulse 2 or 3 times to combine.
Stuff mushroom caps with the mixture. Top with grated Parmesan. Bake 15 to 20 minutes. Allow to cool for 10 minutes. Serve with lemon wedge

Shrimp Stuffed Mushrooms -- 'Har Gow'-inspired stuffed mushrooms and avocado
Before filling, roast mushrooms at 375F for approx 15-20min, flipping halfway through.
Filling Recipe:
288g of shrimp
50g of pork fatback
30g of bamboo shoots
30g of shallots
17g of ginger
20g of Shaoxing wine (1 tablespoon)
9g of soy sauce (1 teaspoon)
5g of sugar (1 teaspoon)
3g of of MSGizzle (1/2 teaspoon)
6g of wheat starch (2 teaspoons)
2g of kosher salt (1/4 teaspoon)
A tiny pinch of white pepper (about a gram)
Fill roasted mushrooms and roast for another 10-20min at 375F or until firm and juicy.
