1/4 lb GROUND PORK
8 oz SHRIMP
2 tb FERMENTED BLACK BEANS
1 WHOLE EGG BEATEN
2 tb OYSTER SAUCE
1 ts CHOPPED GINGER
1 c CHICKEN STOCK
3 DROPS SESAME OIL
IN THE WOK,brOWN THE PORK.( THE PORK SHOULD SEPERATE INTO SMALL PIECES.)ADD THE FERMENTED BLACK BEANS.( WHICH HAVE BEEN SOAKED IN WATER FO 10 MINUTES AND THEN CRUSHED)ALONG WITH 1 CLOVE OF CHOPPED GARLIC AND 1
TEASPOON CHOPPED GINGER.STIR FRY FOR ABOUT 1 MINUTE.ADD THE SHRIMP AND COO UNTIL PINK.ADD THE OYSTER SAUCE AND MIX.THEN ADD THE CHICKEN STOCK.AFTER T SAUCE COMES TO A BOIL,ADD SOME TAPIOCA STARCH OR CORNSTARCH MIXED WITH A LITTLE WATER TO THICKEN.THEN ADD THE BEATEN EGG TO THE SAUCE AND MIX QUICKLY.GARNISH WITH THE SCALION AND ALSO A FEW DROPS OF SESAME OIL

Shrimp with Lobster Sauce
This is a classic dish served in old-time Chinese-American restaurants. It is tasty as well as being an easy and quick dish to prepare. Serve with steamed rice and a side of veggies.
The key to cooking this version of the dish successfully at home is to use medium heat and cook slowly. Notice in the video I am not duplicating the high heat stir frying method used in a restaurant to prepare dish because shrimp cooks very quickly and it is easy to over-cook. So, go slowly and reduce the risk of overshooting the end point.
Note: The shrimp is cooked with a sauce usually reserved for accompanying lobster, hence the name “lobster sauce”. No lobster is used in this dish.
PREP 10-15 minutes COOKING Time 15-20 minutes TOTAL about 25-35 minutes
YIELD 2-3 Servings
Ingredients
½ pound of raw shrimp (any count)
¼ pound of ground (or coarsely chopped) pork
1 egg (cracked into a bowl and set aside)
2 teaspoon fermented black beans* (rinsed and drained)
2 clove of garlic, finely chopped
¼ teaspoon sugar
½ teaspoon salt
½ cup water or stock
1 teaspoon dark soy for color (optional)
Cornstarch paste: combine 2 teaspoon cornstarch in 2 Tablespoon water in a small bowl
Chopped green onions for garnish
Instructions
1. Pre-heat skillet on stovetop at medium heat.
2. Gather and prepare the ingredients.
3. Place a tablespoon of oil in the skillet and saute the fermented black beans and garlic until aromatic. Take care not to burn the garlic.
4. Add the ground pork and spread it around the skillet to separate and saute the pork pieces until cooked through.
5. Add the water (or stock), sugar, salt, and soy sauce (if using). Bring to a gentle boil.
6. Add the shrimp. While maintaining a gentle boil , slowly add the cornstarch paste and stir to combine. Cover the skillet for about a minute (or two depending on the size of the shrimp). Uncover, stir and turn the shrimp over. Cover the skillet again for about a minute.
7. Uncover, lightly beat the egg and pour it into the skillet. Gently move the egg around the sauce and allow it to set up in the boiling mixture. Taste the sauce and add seasonings as needed.
8. Plate, garnish with chopped green onion and serve with rice and a side of green veggies.
* Fermented Black Beans- these very inexpensive fermented soybeans, generally available at Asian grocery stores, are known in Chinese as Douchi (豆豉). Substitute ready-made Black Bean Garlic paste usually available in jar form in the international section of supermarkets (avoid the black beans packed in chili oil—that’s something else entirely).
If fermented black beans are not available substitute 2 teaspoon oyster sauce in lieu of the fermented black bean.

Ingredients: (1 serving)
26/30 Shrimps: 6 or 7 pieces
Peas and carrots: 1/4 cup or 60 g
Baking soda: 1/8 tsp
Water: 1/2 cup
Salt: a pinch and 3/4 tsp for sauce
Garlic powder: sprinkle
White pepper: sprinkle
Sugar: 3/4 tsp
Chicken powder: 1/2 tsp
Egg: 1 (white only)
Unsalted chicken stock or water: 1 cup
Corn starch: 1 tbsp
Veg. Oil: 2 tsp
Green onion: a little bit (optional)
Potato starch: 1 tbsp
Wine: 1 tbsp (optional)
Sesame Oil: 1/8 tsp

A great healthy option!
Shrimp with lobster sauce
The dish was never prepared with actual lobster. The name was invented in North America, to resemble a Cantonese dish that used a very similar sauce in preparing lobster. Due to the high cost of lobster, today we prepared the dish with shrimp, and call it Shrimp prepared with 'lobster' sauce.
Serves: 2 people
Prep time: 20 minutes
Ingredients:
3/4 lb. of Large shrimps
2 Egg white
A handful of snap peas
2 cups of Seafood broth or chicken broth
2.5 TBSP of cornstarch
2 cloves of garlic, minced
Scallions for garnish
4 TBSP of cooking oil
Marinade shrimp with:
1/2 tsp of salt
1/2 tsp garlic powder
For the sauce:
1 tsp of vegetable/ no msg chicken powder
1 TBSP Shao Xing wine
1/2 tsp of white pepper
1/2 tsp of salt
1/2 tsp of sugar
1 tsp of sesame oil
This is a very simple and healthy dish to make especially if you used peeled and deveined shrimps.
This was a popular dish in all Chinese restaurants in the '80s.
