4 tablespoons plus 1 teaspoon unsalted butter
1/4 cup plus 1 teaspoon all-purpose flour
2 tablespoons unsweetened cocoa
1 teaspoon baking powder
1/2 teaspoon salt
3 ounces unsweetened chocolate, broken into 1/2 oun
2 ounces semisweet chocolate, broken into 1/2 ounce
3 eggs
1 cup granulated sugar
1 teaspoon vanilla
1/4 cup sour cream
Butter and flour a square baking pan. Sift together dry ingredients. Melt butter in a double boiler; add chocolate and melt. Beat together eggs, sugar and vanilla. Stir in chocolate mixture until well combined. Add dry ingredients. Add sour cream.
Place batter in prepared pan and bake at 325 degrees Fahrenheit for 40 minutes.
Variations
Macadamia chocolate chunk
Add 4 ounces semisweet chocolate (cut into 1/4 inch chunks) to the batter. Add another four ounces semisweet chocolate to the top, along with 1 1/2 cups raw, unsalted macadamia nuts. Add 10-15 minutes to the cooking time.
Peanut-Raisin
Add 1 1/2 cups raisins to the batter. Spread 1 1/2 cups unsalted peanuts on top. Add 10-15 minutes to the cooking time.
Hazelnut Brownie Cake
Pour 1 recipe of the basic brownie into a 9-inch cake pan, and bake as directed above.
1 1/2 cups heavy cream
12 ounces semisweet chocolate
1 cup chopped, toasted hazelnuts
In a double boiler, melt chocolate into boiling cream to form a ganache. Pour 1 cup of ganache over 1 cup chopped hazelnuts. Cut cake in half and spread hazelnut-ganache mixture in between the layers. Pour plain ganache over cake as an icing. Pipe ganache which has been refrigerated for 10-15 minutes onto the cake in the form of stars as decoration.

A more crust forms on top, and it's chewier. But it will be very sweet.
Sugar Option 2) Sugar 100 g ~ 120 g (1/2 cup ~ 3/5 cup)
Choose this option if you want something less sweet.
[How to bake]
Bake in an oven preheated to 340°F (170°C) for about 22-24 minutes.Times may vary.)
If you want fudge brownies, bake them shorter than the suggested time (within about 20 minutes).

Ingredients:
1 egg
▢1/2 cup granulated sugar
▢1/4 tsp salt
▢1/2 tsp vanilla
▢1/4 cup butter melted
▢1/3 cup all purpose flour
▢1/4 cup cocoa powder
Frosting
▢1/2 cup powdered sugar
▢1 Tbsp butter softened
▢1 Tbsp cocoa powder
▢2-3 tsp milk or whipping cream
Directions:
Preheat oven to 350 degrees F.
Spray a 9 x 5 inch loaf pan with non stick baking spray or line with a piece of parchment paper.
Mix together brownie ingredients and spoon into pan.
Bake at 350 degrees F. for about 20 minutes or until a toothpick comes out clean.
Remove from the pan and allow to cool completely.
While cooling, prepare frosting by combining softened butter, cocoa powder and powdered sugar.
Add in enough milk or whipping cream to get a nice consistency, add in one tsp at a time.
Once brownies have cooled, frost and enjoy!

Yes, I said it. Perfect brownies. Make them even MORE perfect by tailoring them to your taste: simply toss in chocolate chips or chocolate chunks, walnuts or pecans or toffee and/or chocolate candy pieces!
Tip: Make 2 batches and toss one in the freezer! These brownies freeze/thaw beautifully and still taste like they're fresh from the oven.
Perfect Brownies:
2 sticks (16 tablespoons) butter
8 ounces unsweetened chocolate
2 cup sugar
4 eggs
1 teaspoon vanilla
3/4 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
1/4 cup powdered sugar
Melt together butter and baking chocolate using either microwave or double boiler method. Stir sugar. Add eggs and vanilla, and beat the mixture well. Stir in all-purpose flour and
salt.
Bake at 350 degrees in an 8x8 inch square pan for about 25-35 minutes. Closest to 25 minutes for a chewier brownie, more toward 35 minutes for a cake-like brownie. Then, to check for desired doneness, use the toothpick method. Insert toothpick into center of brownies. A few crumbs on the toothpick will give you the chewier texture. No crumbs will yield cake-like brownies.
Once cooled, cut and sprinkle with powdered sugar, if desired.
