1 1/2 lb Pork riblets or pork ribs,
-country style,cut to pieces 5 c Water
4 md Tomatoes, sliced
1 md Onion, sliced
1 1/2 ts Salt
1 md Icicle radish, cut into
-1" pieces -(or 10 red radishes 1/4 lb Green beans
1/2 lb Spinach (or cabbage
-mustard greens or -watercress) 5 md Sampaloc (tamarind)

1. In a large pot, bring water and pork to a boil. Add tomatoes, oni salt
and tamarind. Simmer 1 hour or until pork is tender. 2. Optional: Remove tamarind and mash with some broth. Strain juice into
pot. 3. Taste for seasoning. Bring to a boil. Add green beans and radish 10
minutes. 4. Add spinach, cover and remove from heat. Let stand 5 minute to fi
cooking spinach. Variations: Beef (stewing, brisket, shank or plate) may be used in pl of pork. Adjust cooking time for each.

Sinigang na baboy with Gabi is a Filipino pork soup with taro cooked in a sour broth.
This specific recipe uses pork belly as the main protein ingredient. I also use okra, daikon radish, snake beans (sitaw), ong choy (Chinese kangkong), and long green chili peppers (siling pangsigang). I use more vegetables because my kids love it.

THE PERFECT SINIGANG NA BABOY RECIPE (exact measurements below)
SINIGANG NA BABOY or PORK SINIGANG is a tamarind based soup and a very popular Filipino dish. Pork is usually stewed in tamarind, garlic and tomatoes and vegetables were simultaneously placed into the pot. However, in this version I sauteed it with garlic, onion, tomato and added lemongrass to level up the taste. Serve it while it's hot, perfectly partnered with a freshly white steamed rice and of course with a condiment of fish sauce & red chili.
Ingredients:
4 cloves garlic
1 medium-sized onion
2 medium-sized tomato
3/4 kg of pork spare ribs
3 tbsp of fish sauce
1/2 tsp of ground pepper
2 stalks of lemongrass
200g of taro or gabi
4 cups of pork ribs broth
9 pcs of string beans
1 bundle of river spinach or kangkong
250g or 1/4kg of tamarind (you can adjust the sour taste according to your preference)
2 pcs of green chili

●500 grams pork, sliced into 3 cm cubes, preferably with some fat.
●1 cup green tamarind broth
●1/2 cup chopped onions
●1 tablespoon chopped garlic
●1 cup chopped tomatoes
●100 grams sliced string beans
●100 grams sliced daikon radish
●100 grams sliced eggplant
●2 pieces long green peppers
●100 grams okra
●100 grams chopped and peeled taro root
●2 tablespoon fish sauce
