How To make Slice& Bake Oatmeal Cookies
2 cups butter or margarine
2 cups sugar
2 cups brown sugar
4 eggs
2 teaspoons vanilla
4 cups flour
5 cups rolled oats
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking powder
3/4 cup nuts
chopped
1 cup raisins :

*can use up to 2 cups.
Cut four 14"x12" pieces of waxed paper or plastic wrap. Cream butter or margarine and sugars in a large bowl until smooth. Beat in eggs and vanilla until light and fluffy. In a medium bowl, combine dry ingredients. Stir flour mixture into egg mixture until blended. Stir in nuts and raisins. Divide dough into 4 pieces. Shape each piece into an 8 to 10 inch roll. Wrap each roll in 1 piece of waxed paper or plastic wrap. Place in a freezer container with a tight-fitting lid or wrap airtight in a piece of foil. Label and date. Store in freezer. Use within 6 months.
To make cookies: Slightly thaw dough roll. Preheat oven to 375F. Lightly grease baking sheets; set aside. Cut dough into slices or chunks. Place dough about 1 inch apart on prepared baking sheets. Bake 10 to 12 minutes until edges are light brown and centers are slightly set. Cool about 2 minutes on baking sheet. Remove cookies and cool on wire racks.

Made with chocolate chips and oatmeal, these refrigerator cookies are pretty much slice and bake! Whip up a few batches, keep them in the freezer or refrigerator and whenever you have a cookie craving, pull these out to bake up!

INGREDIENTS
- 1 cup (2 sticks) browned and cooled butter
- 1/2 cup white granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups rolled oats
- 1 cup milk chocolate chips

INSTRUCTIONS
In a medium skillet, melt the butter over medium heat. Allow to bubble and foam. After about 5 minutes, the foaming will lessen and the bottom of the skillet will show brown solids with the butter smelling nutty and looking golden. Scrape into a bowl and cool to a solid state.
Cream the cooled brown butter and sugars until light and fluffy, about 3 minutes.
Add the egg and vanilla and mix to combine. Scrape sides of bowl to ensure even mixing.
Add flour, baking soda and salt. Mix just to combine.
Add rolled oats and chocolate chips. Mix to incorporate, finishing by hand to ensure it is well mixed.
Divide dough in half and shape each half into a log. Wrap in parchment paper, twist the ends shut and place in the refrigerator or airtight container (if wanting to store longer than 1 hour).
When ready to bake, preheat oven to 350 degrees.
Slice prepared cookies into 1/4-inch thick and place on parchment-lined baking sheet. Bake until the edges are set and the centers are just soft, 8-12 minutes.
Remove from oven and cool on pan for 5 minutes.

Chocolate Chip & Oat Cookie Slice
Recipe
225g butter
160g raw sugar
160g brown sugar
2 eggs
1 tsp vanilla
260g plain flour
100g rolled oats
¼ tsp cinnamon
¼ tsp nutmeg
1 tsp baking powder
200g choc chips
1. Preheat the oven to 180°C. Line a 20cm square baking tin.
2. Beat together the butter and both sugars until light and creamy. Add in the eggs and vanilla beat to combine.
3. Mix through the flour, rolled oats, cinnamon, nutmeg, baking powder and half the choc chips mix until well combined.
4. Spread into the prepared tin and sprinkle the remaining choc chip over the top.
5. Bake for 25 minutes until golden.
