How To make Smoked Salmon Quesadillas
4 oz Soft fresh goat cheese
-(montrachet) 2 tb Grated fresh horseradish or
-1 tbsp prepared horseradish -2 tbsp sour Cream 2 ts Chopped fresh dill
8 Inch flour tortillas
4 oz Thinly sliced smoked salmon
A signature starter from Vincent Guerithault on Camelback in Phoenix,Arizona. Makes 4 first course servings Additional chopped fresh dill fresh dill sprigs Blend goat cheese, grated fresh horseradish, sour cream and chopped fresh dill in medium bowl. Season cheese mixture to taste with salt and pepper. Heat heavy large skillet over medium high heat. Add 1 tortilla to skillet and cook until brown spots appear, about 1 minutes per side. Transfer to work surface. Spread 1 tbsp cheese mixture over tortilla. Top with 1/4 of smoked salmon and sprinkle with additional chopped dill. Repeat with remaining tortillas, cheese mixture, smoked salmon and dill. Cut quesadillas into wedges. Garnish with dill sprigs and serve,passing remaining cheese mixture separately. Originally aired as part of the Girls' Cocktail Party episode (Episode SH0505H) on the Food Network, October 13th, 2007.
Ingredients:
8 flour tortillas, taco size
5 ounces garlic herb cheese, softened (recommended: Boursin)
6 ounces smoked salmon
2 tablespoons capers
1 cup shredded monterey jack cheese
1/2 cup sour cream
1 tablespoon fresh dill, finely chopped
1 avocado, sliced
1 1/2 cups cherry tomatoes, halved
1/2 red onion, sliced
Creme fraiche, optional
Directions:
Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.
Lay out 4 tortillas; spread each with half of the herb cheese. Divide and top each tortilla with salmon, capers, and jack cheese. Top with remaining tortillas.
In a small bowl, combine sour cream with dill; set aside. Grill tortillas on hot oiled grill 3 to 4 minutes per side or until cheese has melted. Serve hot topped with sliced avocado, cherry tomatoes, and onion rings. Garnish with creme fraiche.

Smoked Salmon Quesadillas
Serves 1:
•Calories: 196
•Fat: 8.2 grams
•Carbohydrates: 16.9 grams
•Protein: 17.4 grams
Ingredients:
•½ cup frozen peas
•2 tablespoons minced red onion
•1 tablespoon cider vinegar
•3 tablespoons reduced-fat cream cheese
•2 flour tortillas
•1 (3 ounce) package skinless, boneless smoked salmon
•1 tablespoon chopped tomatoes
•1 tablespoon chopped fresh cilantro
Directions:
1) Wash hands for 20 seconds, using warm/soapy water. Make sure you scrub around your wrists, under your finger nails, and in between your fingers.
2) Combine peas, onion, and cider vinegar in a small bowl. Let stand 3 minutes to pickle; drain.
3) Combine the pea-onion mixture with the cream cheese in another small bowl, mashing with a fork to combine.
4) For the quesadilla, spread the cream cheese mixture onto each soft wrap.
5) Spoon the salmon on one of the wraps.
6) Top with the remaining soft wrap, with the cream cheese mixture side down.
7) Coat a large cast-iron skillet or nonstick skillet with extra virgin olive oil.
8) Heat the skillet over medium heat.
9) Add the quesadilla; cook 2 to 3 minutes or until lightly browned, turning once halfway through cooking time.
10) Cut the quesadilla into six wedges. If desired, serve with tomatoes and cilantro.
