Health Happy Holidays: Chewy Gingerbread Cookies
With the Holidays being notorious for a time to indulge in excessive amounts of goodies and treats, I felt it necessary to sneak in a little bit of healthy for my co-workers with these Whole Wheat Gingerbread Cookies! Don't let 'whole wheat' scare you -- these turned out moist and chewy, trust me, you'll never tell the difference!

Whole Wheat Gingerbread Cookies:
Ingredients:
2 1/4 cup Whole Wheat flour
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp ground ginger
1/4 tsp salt
2/3 cup sugar
1/4 cup olive oil
1/3 molasses
1 egg, room temp
1/4 cup Sugar in the Raw
Orange zest from two oranges
Method:
1. Preheat oven to 350 F. In a large bowl, mix together flour, sugar, baking soda, cinnamon, nutmeg, ginger, and salt.
2. With an electric mixer, beat the olive oil, molasses, and about 2 spoonful's of the dry mixture on medium for about 3 minutes. Add the egg; beat for another minute on low. Scrape the sides of the bowl and beat for another minute. Slowly add the dry ingredients to the wet, beating on low just until mixed.
3. Form the cookies into small balls then roll into the Sugar in the Raw, which has been mixed with the orange zest. Place on cookie sheet (don't worry, they don't spread out too much) and bake for 13 minutes, until slightly browned on the bottom. Place on a cooling rack for a couple minutes until digging in! ENJOY :)

Fruitcake Cookies

Ingredients
1/2 pound dried figs
1/4 pound raisins
2 ounces candied cherries, coarsely chopped
2 ounces dried apricots, coarsely chopped
1 tablespoon honey
2 tablespoons dry sherry
1 tablespoon freshly squeezed lemon juice
6 ounces chopped pecans
Kosher salt
1/2 pound (2 sticks) unsalted butter, at room temperature
1/2 teaspoon ground cloves
1/2 cup superfine sugar
1/3 cup light brown sugar, firmly packed
1 extra-large egg
2 2/3 cups all-purpose flour
Directions
Snip off the hard stems of the figs with scissors or a small knife and coarsely chop the figs. In a medium bowl, combine the figs, raisins, cherries, apricots, honey, sherry, lemon juice, pecans, and a pinch of salt. Cover with plastic wrap and allow to sit overnight at room temperature.
In the bowl of an electric mixer fitted with the paddle attachment, cream the butter, cloves, superfine sugar, and brown sugar on medium speed until smooth, about 3 minutes. With the mixer on low speed, add the egg and mix until incorporated. With the mixer still on low, slowly add the flour and 1/4 teaspoon salt just until combined. Don't over mix! Add the fruits and nuts, including any liquid in the bowl.
Divide the dough in half and place each half on the long edge of a 12 by 18-inch piece of parchment or waxed paper. Roll each half into a log, 1 1/2 to 1 3/4-inch thick, making an 18-inch-long roll. Refrigerate the dough for several hours, or until firm.
Preheat the oven to 350 degrees.
With a small, sharp knife, cut the logs into 1/2-inch-thick slices. Place the slices 1/2-inch apart on ungreased sheet pans and bake for 15 to 20 minutes, until lightly golden.

Ingredients
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon ground cardamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
1/2 teaspoon vanilla extract
parchment paper
1/2 stick unsalted butter
1/2 cup powdered sugar
1 cup flour
2/3 cup granulated sugar
1/2 teaspoon ground cinnamon
1 navel orange
Prepare ingredients
Preheat oven to 350°F. Place butter in a large bowl and set aside to soften at room temperature, about 10 minutes. Line a baking sheet with parchment paper.
Cream butter and sugar
To bowl with softened butter, add granulated sugar. Whisk vigorously until mixture is pale and fluffy, 1-2 minutes (this technique, called creaming, gets easier as the butter continues to warm and soften; if you have a hand mixer, even better!). Add vanilla and 1 egg; whisk until mixture is fully combined, 2 minutes more.
In a separate large bowl, stir together flour, baking powder, baking soda, spice mix, ¼ teaspoon salt, and a pinch of black pepper until fully combined. Add flour mixture to bowl with butter-sugar mixture and gently stir until dough is just combined. Wipe bowl from flour mixture clean and reserve for Step 5.
Working with 1 tablespoon at a time, roll cookie dough into balls (you should get about 13) and place on prepared baking sheet, spacing 2 inches apart. Bake until cookies are puffed and slightly golden around the edges, 12-14 minutes.
Make orange glaze
While cookies bake, halve orange. In bowl from flour mixture, squeeze orange to yield 2 tablespoons juice (save any remaining orange for a snack). Add powdered sugar to bowl with juice and whisk until smooth. Set orange glaze aside until cookies are baked and cooled. Use the remaining downtime to get ahead on dishes or relax and enjoy the sweet smells filling your kitchen.
Plate chai-spiced sugar cookies
Once baked, let chai-spiced sugar cookies cool on baking sheet at room temperature for 5 minutes. Drizzle over orange glaze and enjoy your sweet treat!
