How To make Soft Ginger Cookies with Orange Glaze
1 c Buttermilk
2 ts Baking soda
3/4 c Vegetable oil
1 c Sugar
1 c Dark molasses
2 Eggs
3 3/4 c All purpose flour
1 t Salt
2 ts Ground cinnamon
1 t Ground ginger
1 t Grated nutmeg
1/2 ts Ground allspice
1/2 ts Ground cloves
GLAZE:
2 c Plus 1 Tbsp confectioners
-sugar 1 tb Butter (very soft)
1/4 c Orange juice
2 ts Grated orange zest
1/2 ts Vanilla extract
ds Salt
In a small bowl combine buttermilk and baking soda and set aside. They will foam up. In a larger bowl combine oil, sugar,molasses and eggs and beat until well mixed (about 1 minute). Add the buttermilk mixture and blend. Sift together dry ingredients. Slowly add dry ingredients to wet mixture. Let mixture stand 15 minutes. Preheat oven to 325 degrees. Drop batter by heaping tablespoons onto oiled cookie sheet. Bake 8 to 9 minutes until the top springs back when touched with your finger. Do Not overbake. The cookies should be quite soft. While cookies are baking combine glaze ingredients. Remove cookies to wax paper lined wire rack. Frost while warm with 1/2 tsp of glaze for each cookie. Let cool completely. Transfer to trays and place in freezer to completely set if neccesary or to freeze for storage. Once frozen pack in tins in single layers seperated by wax paper. These freeze well. Easy No Spread Cut Out Sugar Cookies | Just 5 INGREDIENTS!

These sugar cookies are buttery and tender-crisp. They are made for cutting out into shapes as they hold their shape very well when baking. The dough is super easy to roll out and cut – and you only need just 5 basic ingredients. The cookies won’t puff up, so they are perfect for icing and decorating as you please. They are wonderful to serve plain too. NO SPREAD. NO PUFF. JUST 5 INGREDIENTS!
You'll need:
• 1 cup (225g) salted butter (room temperature)
• 1 1/2 cup (180g) powdered sugar/icing sugar
• 1 large egg (room temperature)
• 1 1/2 tsp vanilla extract
• 3 1/4 cup (422g) all-purpose flour
Cool completely. Serve. Enjoy!
:: HELPFUL HINTS ::
* Number of cookies will depend on cut out size and how thick you roll your dough. For thinner cookies, roll out your dough to 1/8 and 1/4 for thicker cookies.
* Bake thinner or smaller cookies for 8-10 minutes.
* Measure your flour correctly. Adding too much flour will result to crumbly texture or sandy taste when baked. Fluff the flour in the container before scooping it out. Lightly spoon the flour directly into the measuring cup until it mounds well above the top of the measuring cup. Using the back of the dinner knife (non-serrated side is facing the flour), sweep the knife over the top of the cup to remove the excess flour.
* Let your cookies cool completely before frosting them. If they are not cool, the icing will melt.

Elisen Gingerbread (Elisenlebkuchen in German) is a soft gingerbread cookie with lots of delicious spices in them. They differ from American gingerbread not only in being flourless (except for the Backoblaten) but also in texture and crafting. These are my all-time favorite gingerbread cookies and you should definitely give them a try.
