How To make Sourdough Banana Pancakes
2 c Unbleached pancake mix
1 Egg lightly beaten
6 tb Yoghurt
Buttermilk, as desired Skim milk, as desired 1 Banana, sliced thin
Mix the above with equal amounts of buttermilk and skim milk, with the total amount determined by desired thinness or thickness of mix. (It should not be too thin.) As it is ladled out, in pan or griddle, apply thinly [sic] sliced bananas on uncooked side. Turn when need [sic] to brown other side. Sourdough Pancakes Recipe
This is an easy, no fail sourdough pancakes recipe. If you’ve got sourdough starter you are ready to make these! (You can check out my easy tutorial on making your own sourdough starter—posted May 5th). These simple pancakes make for some of the fluffiest pancakes ever, and there’s a secret to that so make sure to watch! Please give them a try and let me know what you think.

Here are the conversions:
42 g unsalted butter
8 oz. sourdough starter
8 oz. buttermilk (may use milk)
2 eggs
25 g sugar
5 g vanilla
180-240 g flour
5 g baking powder
5 g baking soda

How to Make Fluffy Banana Sourdough Pancakes?
*Ingredients you will need:*
Sourdough starter (discard or bubbly) - 1/2 cup
Wholewheat flour - 2 cups
Palm Sugar or jaggery - 2tbsp
sea salt - 1/2 tsp
Large eggs - 1
Yelakki ripe banana - 2(smashed)
Water or milk - as required
Ghee for drizzling
Mix everything together in a bowl until combined . Make sure the batter is either not too runny or too thick ...just right and use it right away to make pancakes.
If you keep the batter overnight you’ll also get the added benefit of fermentation. On the overnight, the natural acids in the starter help to break down those pesky glutenous enzymes making these pancakes easier to digest.

Serve with honey or maple syrup or chocolate syrup with some sliced bananas
