While I like sourdough pancakes, I don't always have the forethought for them. These pancakes are made with freshly milled soft white wheat and come together quickly. They are filling and nutritious. We serve them with real maple syrup and a tall glass of milk. Enjoy!

Whole Wheat Sourdough Pancakes! NO Baking Soda/Powder Required!

Basic recipe:
- 450 grams soft white wheat flour (or spelt, einkorn, etc)
- 56 grams sugar or sweetener of choice
- 4 eggs
- 250 grams sourdough discard
- 500 grams milk (more as needed)
(Note: if you'd like to cook these immediately, add 2 tsp baking soda and 5 tsp baking powder)
Mix but do not over mix. Allow to sit for 30 minutes before deciding if it needs more milk. Cover and allow to sit at room temp for 4-6 hours, or overnight in the fridge, before cooking.

Spinach
150g Wholewheat Flour

100g Spinach juice (Blend and sift with 150-200g water)
