South West Chipotle Meatballs Recipe
Game day meatballs for your Super Bowl party! This Tex-Mex Southwest chipotle meatball recipe is what you should be cooking for any get together where you need a meatball recipe that your guests will rave about!
Ingredients:
750g (1½ pounds) ground beef
100g grated cheddar cheese
30 mL (2 Tbsp) Cilantro, plus more for garnish
2 cloves garlic, minced
5 mL (1 tsp) ground cumin
5 mL (1 tsp) chipotle chill powder
1 jalapeño, minced
1 large egg
Coarse salt and pepper to taste
15 mL (1 Tbsp) oil
1 onion, chopped
1-2 jalapeño, sliced
16 oz. crushed tomatoes
30 mL (2 Tbsp) chopped chipotle peppers in adobo sauce
Method:
Combine ground beef, cumin, chipotle chill powder, jalapeño, cilantro, cheese, egg, and garlic.
Season with salt and pepper.
Mix, and divide into meatballs.
Heat oil in a large pan over medium-high heat.
Add meatballs and brown on all sides.
Remove the meatballs and add the onions and sliced jalapeños and cook until softened.
Add tomatoes and chipotle peppers and season with salt and pepper.
Stir together and simmer until the flavour develops.
Reduce heat to low and add meatballs tossing in the sauce.
Cover and cook until meatballs are heated through.
Garnish with cilantro, and grated cheese.

Today I want to share with you how to make the best Mexican chicken tortilla soup or also known as sopa azteca , The flavors on this soup is like no other, it’s soooo delicious and it’s perfect to enjoy on any day, any occasion, specially now that its cold!!!! This soup is not spicy at all the chiles just add a good amount of flavor, if you want it to be spicy, add Chile chipotle or arbol! So I hope you all enjoy it! Old recipe found here ????????

Southwestern chicken spaghetti ingredients
3 cups chicken – roughly 3 chicken breasts
16oz spaghetti
4 cups or 453g cheddar cheese
1 red bell pepper
1 green bell pepper
1 medium white onion
2 tbsp or 30ml vegetable oil
6 tbsp or 90g bacon grease
6 tbsp or 32g flour
2 cups or 500ml chicken stock
2 cups or 500ml heavy cream
One 10oz can diced tomatoes and green chilis
One 15oz can of corn -drained
2 tsp oregano
2 tsp cumin
2 tsp chili powder
Pinch of cayenne pepper
1/2 tsp onion powder
Bake in the oven at 350 ˚ F or 176 ˚C for 50 to 60 minutes. If using 9x13 baking dish checking the pasta after 30 to 40 minute – once the pasta is bubbly and the cheese has a touch of lightly golden brown it is ready to be taken out of the oven.

Big Flavor, filling and low calorie
Recipe serves 2 large servings or 4 small servings
Recipe: 1 medium potato diced into 11/2 inch diced, 1 cup chopped fresh tomatoes, 1 jalapeno seeded and chopped, 1/2 red onion diced, 1 Tbsp cilantro chopped, 2 Tbsp chopped green onion, 1 Tsp granulated fresh roasted garlic or chopped garlic.
Heat 2 Tbsp olive oil saute potatoes about 6 to 8 minutes on medium heat, then add the rest of the fresh ingredients, saute 2 minutes.
Add a can of fire roasted diced tomatoes and 1 cup of water, 1 Tbsp of lime juice, and 3 or 4 Tbsp of chopped green chili.
Add Seasonings: 1 tsp chili powder. 1 tsp onion powder, 1 tsp cumin, 1 tsp garlic powder and 1/2 tsp salt and 1 tsp black pepper
Simmer 8 to 10 minutes.
Slice up a few corn tortillas, place on cookie sheet, drizzle some oil, sprinkle cumin, chili powder, bake at 400* for 5 minutes.
Drop in eggs make sure they are submerge in the soup cover 5 minutes uncover add about 2 Tbsp cheddar let melt and serve.
Garnish with tortilla strips, cabbage or some shredded lettuce. For fancy garnish set aside 2 Tbsp of the fresh ingredients and top soup with them before serving.
