How To make Spicy Hot Caribbean Chicken Marinade
4 Green onions
2 Jalapenos (seeded)
1/3 c Lemon juice
1/4 c Honey
2 tb Veg oil
2 tb Fresh thyme leaves OR
2 ts Dried thyme leaves
1/2 ts Salt
1/4 ts Ground allspice
1/4 ts Nutmeg
6 Boneless, skinless chicken
-breasts Place all ingredients except chicken in food processor or blender and blend till smooth. Pour over chicken and marinade for 2-6 hours. No longer than 6 hours. Grill chicken and brush with marinade. Note: I used serranos chilies instead of jalapenos. Preparation Time: 15 mins
Ingredients:
4-5 scotch bonnet peppers
1 green onion or red onion
6 cloves garlic
7 sprig thyme
5 stalks scallion
1/4 cup soy sauce
1/4 cup white vinegar
2 tbsp olive oil
1 tbsp ginger, chopped
1/2 lime or lemon juice
1 tsp nutmeg
10 pimento or 2 tbsp all spice
1 tsp cinnamon
2 tbsp brown sugar
Salt and pepper to taste
2 tbsp sea salt
2 tbsp black pepper

Jerk is quintessentially Caribbean and here is a lovely, very easy recipe that captures the essence of jerk -- allspice, scotch bonnet and spring onions. There are a lot of ingredients in this marinade, but all you have to do is blitz everything together in a blender and then you have an all-purpose marinade to use on vegetables, fish or meat.
I would always recommend marinating overnight to really allow the flavour to seep in.

Jerk Chicken Full Recipe:
marinade: save 25% for the jerk butter sauce
2 bunch scallions
1 large onion
2 habanero pepper (scotch bonnet is better if you can find them)
10 sprigs thyme plucked
10 garlic cloves
1/3 cup lime
1/3 cup orange juice
1/2 cup soy sauce
1/2 cup coconut sugar or brown sugar
2 TBSP distilled white vinegar
1 tsp cinnamon
1/2 tsp nutmeg
1 TBSP coriander
1 1/2 tsp black pepper
1 TBSP allspice
3 tbsp unsalted butter
2 whole chickens with the spines removed
