This recipe is the quintessential Thai street food. These satay skewers are made with pork but can also be done with chicken or beef. The peanut sauce is a classic accompaniment with these, but really, it's good with anything! And just so you know, this is the real deal Thai peanut sauce right here. No peanut butter in a real Thai peanut sauce, it's all about the gritty texture!

Chicken Satay with Spicy Peanut Sauce
This chicken satay combines all of the flavors that I love in Southeast cooking (and yes I know there are a lot them ) It also involves my love of coconut milk. I love using coconut milk in so many dishes because it adds a sweet richness to whatever is begin cook - savory and sweet. And don't get me started on this spicy peanut situation. I could drink that sauce it is so freaking good. Peanut butter is mixed with lime juice, soy sauce and all sorts of other yummy flavors. Be prepared to be obsessed.

Chicken Satay with Spicy Peanut Sauce
FOR THE CHICKEN
1 stalk lemongrass, thinly chopped
2 Tbs. vegetable oil
2 Tbs. fish sauce
2 Tbs. light brown sugar
Juice and zest from 1 lime
1 Tbs. soy sauce
2 cloves garlic, minced
1 tsp. ground turmeric
1 tsp. ground coriander
¼ cup coconut milk
1 tsp. sesame sauce
1 ½ lbs boneless, skinless chicken breast or thighs cut into 1 pieces
FOR THE SPICY PEANUT SAUCE
1/2 cup creamy peanut butter
1/3 cup hot water plus more if needed
1 tsp. Thai red or green curry paste
1Tbs. palm sugar or light brown sugar
1 Tbs. soy sauce
1 Tbs rice vinegar
Juice of 1 lime
1 tsp. sesame oil
1 tsp fish sauce
Sriracha to taste
METHOD:
Make the chicken satay: Combine the lemongrass, oil, fish sauce, sugar, lime zest and juice, soy sauce, garlic, turmeric, coriander coconut milk and sesame oil in a large bowl and whisk well to combine. Add chicken and marinate for at least and hour or up to 12 hours.
Soak 6 bamboo skewers for at least 30 minutes in water. Divide chicken among the skewers. Heat grill or grill pan to medium high. Once pre-heated cook the chicken for about 8 to 10 minutes. Remove from grill and let rest for 5 minutes.
While the chicken is cooking make the peanut sauce. In a medium sized bowl combine the peanut butter, hot water, curry paste, sugar, soy sauce, rice vinegar, lime juice, sesame oil, fish sauce and Sriracha to taste. Stir well adding more water if necessary to thin it out.
Serve the peanut sauce alongside the chicken.

PEANUT SAUCE⤵️
Silly me for posting the spring roll recipe and not the dipping sauce that goes with it.
1 cup water or milk, almond milk, coconut milk
1/4 cup hoisin sauce
1/2 cup peanut butter (chunky or smooth)
1. Bring over some heat and stir stir stir!
2. It will be watery at first but eventually thicken up

Peanut sauce, also known as ‘sambal kacang’, is an authentic Indonesian sauce that is made with roasted or fried peanuts. It’s so rich, flavourful, nutty, thick, spicy, sweet and everything else you would want in a sauce. It’s also super versatile and can be served with many dishes.
In most western countries today, peanut butter is used to make peanut sauce instead of actual peanuts. Although peanut butter is a great substitute, I would never want to make peanut sauce with peanut butter nor would I recommend you to try it because it tastes completely different from traditional peanut sauce.
Being born and raised in Indonesia, this recipe is close to my heart. I can vouch for the authenticity and flavours. It’s truly amazing and you need to try it for yourselves ????????❤️

• 1 peeled shallot
• 4 garlic cloves
• 2 teaspoons ground coriander
• 1 teaspoon ground cumin
• ½ teaspoon ground turmeric
• 2 tablespoons palm or brown sugar
• 1 seeded red finger, Fresno, or jalapeño pepper
• 1” piece peeled fresh ginger
• juice of 1 lime
• 2 tablespoons peanut oil
• 2 tablespoons soy sauce
• ¼ cup sweet soy sauce (kecap manis)
• 3 pounds dark and/or white chicken meat cut into ½” pieces
SUPER Yummy Peanut Sauce for Singapore Satay • Bee Hoon • Gado-Gado 沙爹酱
Satay sauce or sometimes known as peanut sauce, (in Malay = bumbu kacang or sambal kacang) is a chilli-based peanut sauce.
There are a lot of ways you can enjoy this sauce. This sauce goes extremely well with meat such as chicken, mutton or beef and even vegetables. In Southeast Asia, particularly in Singapore, Malaysia, Indonesia and Brunei, we like to dip our grilled skewered meat in it, which is known as satay or sate, to add that extra flavour to the meat. Pour this sauce over vegetables as salad dressing such as in gado-gado, or as a dipping sauce for spring rolls. In the olden days, Teochew Chinese immigrants in Singapore also used this sauce to make Satay Bee Hoon (satay sauce over rice vermicelli).

4 slices of galangal
8 pieces of garlic
20 pieces of shallots
30 pieces of dried chilli (rehydrate these by soaking in water before use)
1 cup of tamarind juice (mix 1 tablespoon of tamarind paste with 1 cup of hot water)
6 tablespoons of brown sugar
1 tablespoon of salt
300g of roasted peanuts (grounded)
900ml of water
Cooking oil (used in blending the spices)
