⭐️ Ingredients
FOR THE POTATOES
2½ pounds of potatoes Yukon gold
½ gallon of cold water
1 teaspoon of salt
2 tablespoons of apple cider vinegar
FOR THE POTATO SALAD DRESSING
¾ cup of vegan mayo
1 tablespoon of apple cider vinegar
1 stalk (2 oz) of celery + ½ teaspoon celery seeds optional
½ cup of shallot
2 tablespoons of mustard
1 cup of fresh herbs dill, parsley, chives, or a mix of all
4 pickled cucumbers
1 teaspoon of salt
¼ teaspoon of black pepper
½ teaspoon of paprika

How to Make Spicy and Sweet Hot Pepper Jam
This is a really easy, flavorful, hot pepper jam that is one of those staple ingredients that you should always have on hand. It's great on a cheese plate, a bagel with cream cheese, sandwiches, pork chops, it's even delicious on ice cream! You can change what peppers you use to make it as spicy as you want it to be as well.
1c 140g. Mixed Hot Pepper
2c 1lb. Gold Bell Peppers
2ea Chipotle Peppers
3c. 700g. Sugar
3c. 700g. White Vinegar
2Tb. 30g Salt
1/4c. 40g. Pectin
Notes:
*For a stiff jam, double the pectin
* pectin can take a few days to set up, so be patient
*It will be thicker when it is cold
*You can skip the canning step and just keep it in the fridge for a few weeks, but it must be kept refrigerated.
*you can use gelatin instead of pectin, but you will not get the same texture.

Chuy's inspired spicy, creamy Boom boom sauce with restaurant style poblano pepper enchiladas and Lime Cilantro rice perfected with Mexican flavors to elevate your taste bud.
This makes double batch of Boom boom sauce, extra sauce can be freeze or use it on tacos, burritos or burgers. It also goes really well with chips and warm tortilla.
To make Poblano Pepper and onion enchiladas
Ingredients
8 medium size tortilla
boom boom enchilada sauce
refried beans
lime cilantro rice
poblano pepper filling
shredded cheese
chopped cilantro and green onions for garnishing
To make Boom boom sauce
Ingredients
7 tomatillos cut in halves
2 poblano pepper
2 serrano pepper
1 jalapeno pepper
1 cup chopped cilantro(leaves and tender stems)
2/3 cup of green onions
8 slices of American cheese
salt
water
This makes double batch of boom boom sauce
To make Lime cilantro rice (in Instant Pot)

1 cup long grain washed white rice
2 tbsp cooking oil
2 tbsp lime zest
11/2 tbsp lime juice
1/3 cup chopped cilantro

This red chile sauce has been one of my most requested recipes and I'm sharing with you my version of our family recipe.

This red chile sauce is so versatile, so delicious, and so easy to make. This sauce is awesome because at its base, it can be used on so many different dishes, from enchiladas to tamales to menudo and so much more. All you got to do is start with this base, and then you can tweak it in any direction, probably as many different sauces as there are chilies, and that's not even taking into account that every single house is going to do it a little bit different.
So whether you're in Texas, New Mexico, Mexico, or along the frontera or anywhere in the USA, remember my advice, what Arnie takes always says, ain't no right way, ain't no wrong way to make chili sauce, and don't let nobody tell you you can't do it the way you like it.
Maybe what your grandma taught your mom, what my grandma taught my mom and my mom taught me may not be exactly the same, even if they're similar, but of course, my grandma's is better than yours. Just kidding! Don't get mad!
Let me just cover real quickly the couple of the different chiles I have. Now, the package here says cascabel or guajillo. It doesn't mean they're the same thing because they're not, but it means you might get one or the other in this package or possibly both. We also have some ancho chile, and we also have some pasilla chile. And I also have some chile de arbol down here. We use that one in our red chili sauce just to give it a little hint of heat and a little more complex flavor.
All right, so in the recipe we're going to use 15 guajillo/cascabel chiles, a couple of ancho chiles, and probably about four or five of the chile de arbol, a whole onion, and six cloves of garlic. All right, friend, let's get started and make this amazing red chili sauce.
