INGREDIENTS:
Blanch bitter melons:
1 tsp Salt
4 Bitter Melons
Make Pork Mixture & Soup
1lb Ground Pork
½ lb Fish Paste
1/3 cup Wood Ear Mushrooms (soaked in water 10 min before use and then chopped)
½ tbsp Cooking Oil
1 tsp Black Pepper
2 tsp Fish Sauce
3 tbsp Fried Shallots
2 tsp Fried Garlics
2 tsp Mushroom Seasoning
1 packet Glass Noodles (soaked in water 10 min before use and then chopped)
8 cups Water
1 Rock Sugar
Green Onions
RECIPE:
In a pot of boiling water with salt, blanch the bitter melons for 5 minutes to help remove the bitter taste.
Slice the middle of the bitter melon and remove the seeds.
Next, we are going to make the stuffing.
Chop the wood ear mushrooms and glass noodles by hand or using the food processor.
In a large bowl, put in ground pork, fish paste, wood ear mushroom, glass noodles, cooking oil, black pepper, fish sauce, fried shallots, fried garlics, mushroom seasoning and mix thoroughly.
Then, stuff the bitter melons with the pork mixture.
Now, it’s time to make the broth. Put in boiling water, fish sauce, rock sugar, and the bitter melons.
Pressure Cook for 10 minutes and then Quick Release. Put in some green onions and more fish sauce to your taste. Enjoy this healthy soup everyone.

Recipe: Stuffed Bitter Melon Soup / แกงจีดมะระยัดใส้
Ingredients / ส่วนผสม
1 lb. ground pork / เนื้อหมูบด 1 ปอนด์
2 pieces bitter melon / แตงขม 2 ชิ้น
5 stalks of spring onion / ต้นหอม 5 ต้น
1 carrot / 1 หัวแครอท
70g wood ear mushroom / เห็ดหูหนู 70 กรัม
1/2 tbsp. black pepper / พริกไทยดำ 1/2 ช้อนโต๊ะ
4 cloves of garlic / กระเทียม 4 กลีบ
2 tbsp. fish sauce / น้ำปลา 2 ช้อนโต๊ะ
4 tbsp. white soy sauce / ซอสถั่วเหลืองสีขาว 4 ช้อนโต๊ะ
3 tbsp. Oyster sauce / ซอสหอยนางรม 3 ช้อนโต๊ะ
1 tbsp. Tapioca flour / แป้งมันสำปะหลัง 1 ช้อนโต๊ะ
1/2 tbsp. sugar / น้ำตาล 1/2 ช้อนโต๊ะ
1/2 tbsp. of salt / เกลือ 2 ช้อนโต๊ะ
2 tbsp. chicken bouillon powder / ผงน้ำซุปไก่ 2 ช้อนโต๊ะ
Tips / เคล็ดลับ:
note: if you don't like bitterness, be sure to soak the bitter melon in the salt-water for 10 minutes before cooking.

1/2 lb ground pork, turkey or chicken
15 medium deveined shrimp
1/2 package bean thread noodles
1 tsp dried black fungus slivers (also called wood ear mushrooms)
1 green scallion
1/4 small onion
2 tsp fish sauce for meat filling
6 cups water
3 Tbsp fish sauce for soup
1/4 tsp black pepper
Yields: 4-6 servings

Chinese Bitter Melon Recipe

Today, we are going to make something special - bitter melon. Have you ever wondered what it is and how to cook it when you see it at the Asian grocery stores? So, I am going to share the easiest recipe that you can cook it - Stir Fry Bitter Melon With Garlic (蒜蓉炒苦瓜)

INGREDIENTS
500 grams of bitter melon
1 tsp of salt to reduce the bitter taste
6-8 pieces of dried red chilies
3-4 pieces of fresh red chilies
3 cloves of garlic
1-2 tbsp of cooking oil
1 tsp of Sichuan peppercorn (Amazon Link -
Salt to taste (I used 3/4 tsp)
INSTRUCTIONS
Cut the bitter melon in half, then quarter it. Remove the white spongy inside part. You can use a rounded teaspoon to scrape the last bits of the white part.
Cut it with a 45-degree angle into 1/3 of an inch thick slices. Season it with 1 tsp of salt. Rub for a few minutes. Let it sit for 15 minutes.
Cut some red, dried chilies open and remove the seeds.
Roughly dice some fresh red chilies
Press 5 cloves of garlic through a garlic presser.
Optionally, prepare 1 tsp of Sichuan peppercorns.
Now go back and check out the bitter melon. Squeeze out as much moisture as you can.
Rinse the bitter melon with cold running water several times. Drain it but doesn’t need to be thorough. A little bit of excess water will make sure the garlic doesn’t burn as fast when stir-frying.
Add 1-2 tbsp of oil to the wok along with the Sichuan peppercorns. Turn the heat to low. As the temperature climbs up slowly, the oil will be seasoned with the peppercorn flavor.
Once you see the color of the peppercorns is getting dark, you can take them out and discard them. Turn the heat to medium. Add in the bitter melon, dried chili, fresh chili, and garlic. Stir for a couple of minutes.
Give it a taste and then add the salt to adjust the flavor. Be generous with the salt amount especially if you have never tried bitter melon before because the salt will suppress a little bit of the bitter taste. Give it a final stir and you are done.

Hello Foodies!
Today, I'll be showing you all how to make a very simple stuffed bitter melon soup my mom would make for us growing up. Yes, I do love bitter melon! I know some of you don't like bitter foods, but maybe someday you might outgrow it ;) This version is different from the Vietnamese one since it doesn't contain clear bean tread noodles or wood-ear shrooms. There's a ton of ways to make stuffed bitter melon. My mom would make this dish with a lot of herbs and boiled in a simple chicken and lemongrass broth. We will be using chicken for this recipe to keep it light. I love it because it's super clean, simple, light and quite healthy during this time of the year.
