How To make Stuffed Cantaloupe
1 Cantaloupe, medium
White or rose wine 1/4 lb Blue cheese, crumbled
1/2 lb Ricotta or farmer's cheese
1/4 c Sour cream or heavy sweet
-cream Salt and freshly ground -pepper Cut a slice off the top of the cantaloupe, scoop out the fruit with a melon-ball cutter. Marinate the melon balls in wine until time to serve. In the meantime, blend together cheeses and cream. Season to taste with salt and pepper. Pile the cheese mixture lightly into the cantaloupe shell. If it does not fill the shell lower the rim of the shell by cutting with knife in jagged edges to form a "basket edge." To eat, spear melon balls with toothpicks, and dip them into the cheese mixture for a very pretty, refreshingly different appetizer. Makes about 1 cup cheese mixture and about 20 melon balls. Stuffed Melon Kavun Dolmasi From Ottoman Cuisine
I have an interesting Ottoman recipe back from 16-century Kavun Dolması Stuffed Melon. The Ottomans loved stuffing anything in season, including fruits. This recipe was served at the ceremony for Sultan Süleyman The magnificent two sons in Edirne.
With the aroma of melon, dried fruits, nuts, ground lamb meat, and spices it is a festive dish you can make in special days
Ingredients For Stuffed Melon:
1 medium-size or 2 small ripen melon
400 gr. ground meat (Half lamb half beef)
1 medium-size onion
a handful of fresh parsley and dill
1/2 cup rice
2 tbsp butter
50gr. each whole almond and pistachios
3 tbsp dried currants
salt to taste
black pepper, cinnamon, all-spice (optional)

Recipe: Stuffed Bitter Melon Soup / แกงจีดมะระยัดใส้
Ingredients / ส่วนผสม
1 lb. ground pork / เนื้อหมูบด 1 ปอนด์
2 pieces bitter melon / แตงขม 2 ชิ้น
5 stalks of spring onion / ต้นหอม 5 ต้น
1 carrot / 1 หัวแครอท
70g wood ear mushroom / เห็ดหูหนู 70 กรัม
1/2 tbsp. black pepper / พริกไทยดำ 1/2 ช้อนโต๊ะ
4 cloves of garlic / กระเทียม 4 กลีบ
2 tbsp. fish sauce / น้ำปลา 2 ช้อนโต๊ะ
4 tbsp. white soy sauce / ซอสถั่วเหลืองสีขาว 4 ช้อนโต๊ะ
3 tbsp. Oyster sauce / ซอสหอยนางรม 3 ช้อนโต๊ะ
1 tbsp. Tapioca flour / แป้งมันสำปะหลัง 1 ช้อนโต๊ะ
1/2 tbsp. sugar / น้ำตาล 1/2 ช้อนโต๊ะ

Tips / เคล็ดลับ:
note: if you don't like bitterness, be sure to soak the bitter melon in the salt-water for 10 minutes before cooking.

INGREDIENTS:
Blanch bitter melons:
1 tsp Salt
4 Bitter Melons
Make Pork Mixture & Soup
1lb Ground Pork
½ lb Fish Paste
1/3 cup Wood Ear Mushrooms (soaked in water 10 min before use and then chopped)
½ tbsp Cooking Oil
1 tsp Black Pepper
2 tsp Fish Sauce
3 tbsp Fried Shallots
2 tsp Fried Garlics
2 tsp Mushroom Seasoning
1 packet Glass Noodles (soaked in water 10 min before use and then chopped)
8 cups Water
1 Rock Sugar
Green Onions
RECIPE:
In a pot of boiling water with salt, blanch the bitter melons for 5 minutes to help remove the bitter taste.
Slice the middle of the bitter melon and remove the seeds.
Next, we are going to make the stuffing.
Chop the wood ear mushrooms and glass noodles by hand or using the food processor.
In a large bowl, put in ground pork, fish paste, wood ear mushroom, glass noodles, cooking oil, black pepper, fish sauce, fried shallots, fried garlics, mushroom seasoning and mix thoroughly.
Then, stuff the bitter melons with the pork mixture.
Now, it’s time to make the broth. Put in boiling water, fish sauce, rock sugar, and the bitter melons.
Pressure Cook for 10 minutes and then Quick Release. Put in some green onions and more fish sauce to your taste. Enjoy this healthy soup everyone.
