How To make Stuffed Meat Loaf
1 c Soft bread crumbs
1/3 c Finely chopped onions
1 t Salt
1/8 t Pepper
1/4 c Milk
1 Egg, slightly beaten
1/2 lb Ground beef chuck
1/2 lb Lean ground pork
1/2 c Shredded Cheddar cheese
4 oz Mushroom stems and pieces,
-drained 1 1/2 c Seasoned mashed potatoes,
Leftover, made freshly or From pk instant potatoes Paprika (optional) 1. In a large mixing bowl combine bread crumbs, onion, salt, pepper, milk
and egg; mix thoroughly using a rubber spatula. 2. Crumble the gound meats into the bread crumb mixture and gently mix until thoroughly combined. 3. In a shallow, heat-resistant, non-metallic baking dish shape about one-third of meat mixture into a 4x6-inch rectangle. 4. Sprinkle meat with 1/2 of shredded cheese. Arrange mushroom pieces over cheese, leaving about
1/2-inch border around edges. Sprinkle with remaining cheese. 5. Carefully
shape the remaining meat mixture over cheese and mushrooms, carefully sealing the edges. 6. Heat, uncovered, in Microwave Oven 9 minutes or until almost done. 7. With a spatula frost the meat loaf with mashed potatoes. completely covering the top and sides. If desired sprinkle with paprika. 8. Heat, uncovered, in Microwave Oven 3 minutes or until potatoes are hot and meat is completely cooked. 9. Allow to stand at room temperature 4 minutes before slicing. Variation: Peas, hard-cooked eggs, artichoke hearts, olives, pimientos or many other foods may be used in place of the mushrooms. Swiss, Muenster, Monterey Jack, Tilsit. mozzarella or any other cheese may be substituted for the Cheddar cheese.

In today's video we are talking about how to smoke meatloaf, but not just any smoked meatloaf! We are talking about the BEST stuffed meatloaf recipe I've ever made! This smoked stuffed meatloaf is so easy to make and is stuffed with cheese and spinach! I promise you this smoked cheese stuffed meatloaf is far from dry and the secret to that is the little bit of ground pork added to the beef when making the meatloaf! Of course it is very important to monitor the internal temperature when smoking meatloaf so it stays nice and juicy and definitely doesn't dry out. I have the complete recipe for this smoked stuff meatloaf down below, so go ahead and give it a try!
Smoked BBQ Stuffed Meatloaf
| Ingredients |
-2 Pounds Ground Beef
-3/4 Pound Pork Sausage
-1 Cup Milk
-1 Cup Breadcrumbs
-4 Cloves of Garlic (diced)
-1 Onion (diced)
-Sliced Pepper Jack Cheese
-Spinach (sautéed)
-2 Eggs (Beaten)
-Tailgater's BBQ Party Rub
-Elk Creek Hog Knuckle BBQ Rub
-BBQ Sauce of your choice
| Instructions |
Prep:
1. In a large bowl, mix ground beef, pork, garlic, and onions until evenly incorporated.
2. Once the pork, beef, garlic, and onions are mixed thoroughly, pour in milk, breadcrumbs, milk, and eggs and mix thoroughly until incorporated and slightly tacky.
3. Season the meat to desired taste and mix thoroughly.
4. In a loaf pan lined with plastic wrap, put down a layer of meat mixture halfway up the loaf pan and then lay down the slices of cheese and spinach.
5. Cover the cheese and spinach with the remainder of the meat mixture being sure to pack it tight in a loaf pan.
6. Once packed tightly in the loaf pan, flip the loaf pan onto a cooking rack and remove plastic wrap.
7. Apply a layer of the all-purpose rub to the outside of the loaf followed by a layer of BBQ seasoning.

1. Set the smoker to 300º F.
2. Once the smoker is to temp put the meatloaf on the smoker.
3. Smoke the meatloaf can until it reaches an internal temperature of 160º F in the center of the loaf (Approximately 1.5-2 hours).
4. Once the loaf reaches 160º F, apply a light glaze of sauce to the loaf and allow to cook until it reaches an internal temperature of 165º in the center of the loaf.
5. Once the meatloaf has reached 165º F in the center of the loaf, remove from smoker and allow to rest for 10-15 minutes.
6. After the meatloaf has rested for 10-15 minutes, slice, eat and enjoy!!!

1 box Boursin Garlic and Herbs
1/4 cup diced parsley
1 bell pepper diced
1/2 large onion diced
2 tbsps sour cream
1-2 tbsps garlic paste
2 beaten eggs
1 1/2 - 2 cups bread crumbs
smoked paprika/italian seasoning/red pepper flakes
salt/pepper/garlic/onion powder
Sauce:
1 cup BBQ
1 cup ketchup
1-2 tbsps tomato paste
2 tbsps dijon mustard
1 tbsps worcestershire sauce
1/4 cup brown sugar
salt and pepper / smoked paprika
Directions:
Begin by prepping your veggies and parsley. Next, saute veggies, parsley, and garlic for 3-4 minutes. Place in freezer to chill after softened. In a large mixing bowl combine remaining ingredients (except sauce ingredients). Work everything together with your hands until it forms one large meatball. Add bread crumbs a little at a time until the loaf takes shape. Place mixture in the fridge for 30 minutes.
Preheat oven to 375 and form into a loaf shape. Place on wire rack or into a loaf pan. Bake for 30-45 minutes. Mix together sauce ingredients over medium low heat. Baste meatloaf with sauce during final 20-30 minutes. Meatloaf is done when it registers 165 degrees internal temp in the middle.

This meatloaf is so much fun to make and eat!
How to make it step by step:
INGREDIENTS
750g (1 ½ pounds) ground meat;
5 hard-boiled eggs, peeled;
8 slices of ham;
40g (5 tbsp) breadcrumbs;
20g (4 tbsp) parmesan;
6 slices of cheese;
5g (2 tsp) chopped parsley;
½ tsp nutmeg;
Salt and pepper.
METHOD
Combine ground meat with salt, pepper, parsley, breadcrumbs, and parmesan.
Layer out a sheet of parchment paper brushed with olive oil.
Spread meat on the sheet of parchment, forming a rectangle.
Layer sliced cheese and ham on top.
Place 5 eggs in a line in the middle of the meat layer and roll it tightly, pinching both edges to cover the eggs.
Bake at 200°C/400°F for 40 minutes.

Meatloaf Made With Boxed Stuffing Mix
Meatloaf made with Great Value Dry Stuffing Mix.( Use Any Stuffing Mix of your choice )
Ingredients Needed:
2 Large Eggs
2 Pounds Ground Beef
Box of Stuffing Mix (Your Choice )
Small Onion Chopped
1/2 c. Bbq Sauce
1/2 c. Ketchup
Put 2 Pounds of Ground Beef in a bowl
Pour in the Stuffing Mix
Add 2 Large Eggs
Add Small Chopped Onion
Add 1/4 c. Ketchup and 1/4 c. Bbq Sauce together (Mix and add to Meat Mixture )
Add Salt if you want ( Don't Really Need It )
Add 1/2 tsp. Garlic Powder
Mix all the ingredients together
Next :
Add Mixed Meat Mixture to a 9X13 in. pan
Use Loaf Pans if you prefer.
Mash Mixture out to fill your pan
Go around all the edges of the meat and push it slightly away from the sides to drain the grease off easily.
Mix another 1/2 c. Ketchup and 1/2 c. BBQ Sauce together and add to the top of Meatloaf.
Put in oven uncovered for 1 hour at 350 Degrees
Remove the Grease as needed.
Let Cool And Eat
