How To make Sun Dried Tomato Noodle Pudding
1 c Sun-dried tomatoes
2 c Whipping cream
2 c Milk
4 oz Egg noodles
2 tb Olive oil, any kind
8 Eggs
1/2 ts Salt
1/4 ts Freshly ground pepper
1/2 lb Grated Cheddar cheese
1/2 lb Mozzarella cheese
- in 1/2-in pieces IF THE DRIED TOMATOES are packed in oil, drain them and pat them dry on paper towels. If dried tomatoes are not packed in oil, combine them with 1 cup of cream and let stand to soften for 30 minutes. Drain tomatoes, saving cream for later. Roughly chop dried tomatoes and place in a medium mixing bowl. Meanwhile, bring a pot of water to a boil on the stove over high heat, add the egg noodles and cook 4 minutes, keeping them al dente. Drain, place in mixing bowl with tomatoes and toss with 1 tablespoon olive oil. Grease an 8-by-10-inch baking dish with remaining olive oil. Preheat oven to 325F. In another bowl, combine eggs, reserved cream and remaining 1 cup milk, salt and pepper and beat well. Add the Cheddar and mozzarella cheeses to the noodles and mix. Add the cream mixture and pour into baking dish. Cover baking dish with aluminum foil and place in a larger pan filled with boiling water and place in oven until the pudding is set, about 35 minutes. The pudding is done when it has puffed slightly and a knife inserted in the center comes out clean. Remove from water bath and let rest for 5 minutes before serving.

This one pot pasta with sun dried tomatoes and burrata is one of my favorites these days and was inspired by the Martha Stewart one pot pasta. If you haven't seen it, here is the link, you should check it out!
This tasty recipe is perfect for weeknight suppers. If you want to make this dish completely vegetarian, make sure to buy vegetarian Parmesan cheese, I get mine at Whole Foods.

One Pot Pasta with Sun Dried Tomatoes and Burrata
1 lb. penne pasta (or other small bite-sized pasta)
1/2 onion, diced
1 cup crushed tomatoes
1 - 8.5 oz. jar sundried tomatoes, drained
1 large or 2 small Parmesan cheese rinds
kosher salt
4 oz. burrata
Garnish with basil and Parmesan cheese
In a large pot add the pasta, onion, tomatoes, sun dried tomatoes, parmesan cheese rind, and large pinch of salt. Add 5 cups of water and bring mixture to a boil. Once the pasta is at a boil, reduce heat to medium and continue cooking for about 9 to 12 minutes or until the water is mostly absorbed and the pasta is cooked through.
Fold in burrata and another pinch of salt. Remove Parmesan cheese rind and garnish with basil and Parmesan cheese.
Serves warm.
Makes 4 servings.

Here’s how to make this sundried tomato and feta egg:
1. In a pan on medium high heat, add a drizzle of sundried tomato oil. Chop up 1-2 sundried tomatoes and add those in as well.
2. As the sundried tomatoes start to crispy up and the pan is hot, add in some crumbled feta (I used bulrgarian), and let them start to sizzle and crisp.
3. Quickly crack and egg on top of the sundried tomatoes and feta, and add a dash of salt.
4. To help the egg cook, add 1-2 tsp of water in the pan and cover with the lid. Let cook for about 2 min, so the whites are cooked but the yolk is still runny.
5. Add to a bagel (homemade of course, with my 3 ingredient recipe) and enjoy!!! ????
