How To make Sunday Salsa Meat Loaf
-JUDI M. PHELPS 1 1/4 lb Lean ground beef
1 c Crushed tortilla chips
1/4 c Fresh or prepared salsa
1 Clove garlic; minced
6 Black olives; sliced
1/2 c Yellow onions; chopped
1/4 c Red pepper; chopped
1/4 c Green pepper; chopped
1 Egg
1/2 ts Chili powder
1/4 ts Barbecue spice
1/4 c Tomato juice
Black pepper; to taste Fresh parsley sprigs; for -garnish Preheat oven to 350 degrees F. Stir all ingredients together except for the parsley until it is well mixed. Place in a vegetable sprayed or lightly oiled 5 x 9-1/2-inch loaf pan. Bake the meat loaf until it
is done and browned, about 1 hour. Remove from the oven and let it stand about 5 minutes. Take a knife and run it around the sides of the pan to loosen. Invert the meat loaf onto a large plate or platter. Garnish with the parsley if desired. Serve. Salsa Meatloaf // RP COOKING
One of our all-time most popular RP recipes! The salsa makes this meatloaf SO MOIST!

INGREDIENTS

12 finely crushed whole grain crackers
1 tsp cumin
1/2 tsp garlic powder
1/4 tsp black pepper
1/2 tsp cinnamon
1 Cup mild veggies only salsa
3/4 tsp salt
1.75 lb ground beef
1.5 Cup shredded part skim mozz cheese
3 egg whites
Topping
4 oz tomato sauce
1.5 Tbsp tomato paste
1 tsp worcestshire sauce
1/2 tsp lime juice
1/8 tsp salt
INSTRUCTIONS
• 350 oven
• Stir together crackers through salt, and let stand while you mix the beef.
• Mix beef, mozzarella cheese and egg whites. Gently combine beef mix and cracker mix, stir only until combined.
• Line a rimmed baking pan with foil (place a wire cooling rack on top, if desired). Spray rack or pan with cooking spray.
• Shape meatloaf into a large relatively flat (2-3 inches tall) *rectangle on top of the wire rack.
• *This shape cooks evenly, and is easier to portion into equal portions, once cooked.
• Bake 40 minutes.
• Stir together tomato sauce through salt to make the topping; brush over meatloaf.
• Bake another 15-20 minutes until cooked through. Let stand 10 minutes.
