How To make Super Double Cream Cheesecake
CRUST:
1 Box (8.5 oz.) chocolate
Wafer cookies 1/4 c Sugar
1 ts Ground cinnamon
Pinch of salt 6 tb Unsalted butter, melted
FILLING:
3 (8 oz.) packages cream
Cheese, softened 2/3 c Sugar
1/2 ts Salt
3 Eggs
3 c Sour cream
1 tb Fresh lemon juice
1 1/2 tb Bourbon or dark rum
1 ts Vanilla extract
2 tb Unsalted butter, melted
MAKE THE CRUST: In a food processor or blender, grind the cookies into moderately fine textured crumbs. Add the sugar, cinnamon and salt and process briefly to blend. Transfer to a bowl, pour the butter over the crumbs and toss with a fork to moisten evenly. Gently press the crumbs evenly over the bottom and sides of a 9-inch springform pan. PREPARE THE CHEESECAKE FILLING: Preheat the oven to 350F. In a food processor, combine the cream cheese, sugar, salt and eggs; blend until smooth, scraping down the sides of the container as necessary. Add the sour cream (see note), lemon juice, bourbon, vanilla, butter, and blend. Pour the filling into the cookie crumb shell and bake in the middle of the oven for 45
minutes. Turn off the oven, prop the oven door slightly open and allow the cake to rest in the oven for 1 hour. Cool on a rack and refrigerate for at least 8 hours. Note: If the container of the food processor is not large enough, add only 1 cup of sour cream. Pour about half the mixture into a mixing bowl; add
the reamining 2 cups of sour cream to the processor and blend. Combine both batches in the mixing bowl and stir to blend. "This is the epitome of cheesecakes - you won't find a creamier, tastier or better one anywhere. Don't open the door during baking if you want to keep the top from cracking. Make this cake at least a day before you want to serve it to allow the flavors to develop."

My no bake cheesecake is perfect for when you’re having people over and want to make something in advance, you have a few minutes to make a delicious dessert that can please a crowd, or you just don’t want to turn the oven on! I like my cheesecakes light and creamy, so I pulled out a couple of tricks in this recipe to make that happen no super-dense bricks for us!

Basque Burnt Cheesecake Recipe | Creamy and gooey easy cheesecake
A simple cheesecake that is the opposite of what you would imagine the perfect cheesecake to be.
Overly dark on the top, no biscuit or sponge base, and without the use of a water bath in the baking process. It's as simple as a cheesecake could get.
I had a small obsession with this cake ever since I laid eyes on it. Visually it stole my heart, and although I have never tasted the original slice of this cake from Basque, I have tried my best to recreate what I imagine it to be and this is my take on that cake.

5 Ingredient No Bake Cheesecake
This is such an easy cheesecake recipe to make with just 5 ingredients -- including a homemade crust! It's no bake too!

►INGREDIENTS:
1 ½ cups graham cracker crumbs
6 tablespoons butter, melted
1 ½ cups cold heavy cream
2 bricks (16 ounces) cream cheese, softened
1 ¼ cups powdered sugar

►DIRECTIONS:
1. Grease a 9-inch springform pan very lightly with baking spray.
In a large bowl, stir together the graham cracker crumbs and melted butter.*
2. Press the graham cracker mixture into the bottom and sides of the pan, creating a ¼-inch thick border all the way around. Make sure to pack it tightly so the crust isn’t too crumbly.
3. Place the crust in the freezer to chill for 20 minutes while you prepare the filling.
4. Add the cold heavy cream to the bowl of a stand mixer fitted with the whisk attachment and beat on medium speed until the cream holds stiff peaks — about 2 minutes. Remove the whipped cream to a separate bowl.
5. Add the cream cheese to the bowl of the stand mixer (still fitted with the whisk attachment) and turn the speed to low. Slowly add the powdered sugar a little at a time.
6. When all of the powdered sugar has been incorporated, turn the speed to medium and beat until the cream cheese is light and fluffy — about 2 minutes.
7. Add the whipped cream back to the cream cheese mixture and fold it in gently.
8. Add the cheesecake filling to the chilled crust and smooth out the top.
9. Place the cheesecake in the freezer to chill for at least 6 hours, preferably overnight.
10. When ready to serve, run a knife around the edge between the crust and the pan and then release the springform pan.
11. To slice, run a sharp knife under hot water and slice through the cheesecake. Run the knife under hot water and wipe it clean between each slice.
12. Serve the cheesecake chilled and store any leftovers in an airtight container in the fridge for up to 3 days.
