Sweet and Sour Pork
The best ever Sweet and Sour Pork recipe is loaded with tricks the Chinese have been using for centuries: double dredge and double fry for the crispiest coating, economical pork cuts used for flavour and juiciness, but tenderised with baking soda so you'd swear they're pricey chops, and a sauce that's not sickeningly sweet.

I hope you enjoy this recipe. I have served this in my restaurant for over 6 years and at my dad's restaurant for over 10 years.
The measurements aren't 100% exact as we create large batches of this sauce but tweak it to be sweeter or more sour as you please.
