Sweet Potato Pie from Summer Sweet Potato Harvest
Complete recipe for sweet potato pie using baked sweet potatoes I grew in 2022. This recipe uses brown sugar and is so good.
3 medium to large sweet potatoes baked
1/2 cup softened butter
3/4 cup brown sugar
2 teaspoons vanilla extract
1/2 cup half and half ( may use evaporated milk)
2 large eggs
I use very little spices in this a dash of nutmeg and a dash of cinnamon
Pour into a 9 inch pie crust and bake at 350 for 60 minutes or until pie doesn’t jiggle in middle and toothpick inserted in center is clean

Purple Sweet Potato Pie from the garden ????????
You can use regular sweet potatoes instead of the purple ones. The purple ones made my pie look too gorgeous tho - I was literally in awe. ????
Ingredients:
???? 1 lb sweet potatoes
???? 1/2 cup heavy cream
???? 3/4-1 cup sugar (depends how sweet you want it)
???? 8 TBSP softened butter
???? 2 large eggs
???? 1/2 tsp ground cinnamon
???? 1/2 tsp ground nutmeg
???? 1 tsp vanilla extract
???? 9 inch pie crust (unbaked)
Directions:
???? Place unpeeled sweet potatoes in pot and cover with water. Bring to a boil, and keep boiling until tender when pierced with a fork.
???? Remove sweet potatoes from boiling water and run under cold water, then peel the skin off.
???? Pre-heat oven at 350°F
???? Mash the sweet potatoes, add butter, and mix using an electric mixer.
???? Add heavy cream, sugar, eggs, ground nutmeg, ground cinnamon, and vanilla extract. Beat until mixture is smooth.
???? Pour filling into unbaked pie crust.
???? Bake for about 1 hr or until knife inserted in the center comes out clean.
???? Let it cool down, serve with whipped cream, and enjoy!

Sweet Potato Pie
Filling Ingredients:
1⁄3 cup butter
1⁄2 cup sugar
2 large eggs
3⁄4 cup half and half or evaporated milk
2 cups mashed sweet potatoes
1 teaspoon vanilla
1⁄2 teaspoon cinnamon
1⁄2 teaspoon nutmeg
1⁄4 teaspoon salt
Directions:
In a mixing bowl, cream butter and sugar.
Add eggs; mix well.
Beat in milk, sweet potatoes, vanilla, cinnamon, nutmeg, and salt.
Pour into pie shell.
Bake at 425 degrees for 15 minutes.
Reduce heat to 350 degrees. Bake 35-45 minutes longer or until toothpick inserted into the middle comes out clean.
Ray's flaky pie crust
1 1/4 cups all-purpose flour
1/2 teaspoon salt
5 Tblsp shortening
1/4 + cup cold water
Mix flour and salt in bowl. Cut the Crisco into the flour with pastry cutter, fork or whisk until crumble sized. Sprinkle water over mixture while using a rubber spatula to press the dough into itself. If the dough falls apart, add 1 tablespoon extra water. Form a ball. Wrap with plastic wrap and refrigerate 20 minutes to cool. Lightly flour work surface, top of dough and rolling pin. Use rolling pin to roll out dough to a 12-inch circle (about 1/8-inch thick). Gently press dough down into dish. For unfilled pie crust bake 20-30 minutes at 375 until golden brown.
Homemade Whipped Cream
2 cups Heavy Whipping Cream
2-3 tablespoons Powdered sugar
1/2 teaspoon vanilla
Whip until soft peaks. Keep refrigerated
